Tuscan Sfoglie: Sweet Ricotta Pastries Preparation time: 20 minutes Baking time: 25 minutes Total time: 45 minutes Number of servings: 8 Discover the pleasure of a simple and quick recipe for sweet ricotta pastries, inspired by Tuscan traditions. These Tuscan sfoglie are perfect as a dessert or snack, easy to prepare and customizable according to everyone's preferences. From the delicate flavors of ricotta to the crispy pastry layers, each bite will transport you to the heart of Italy. Ingredients: - 500 g of shortcrust pastry (you can use ready-made pastry or make it at home) - 300 g of fresh ricotta - 100 g of sugar - 2 eggs - 1 teaspoon of vanilla extract (or the seeds from a vanilla pod) - Zest of one lemon (for extra flavor) - 1 beaten egg (for brushing) - Powdered sugar (optional, for decoration) Step 1: Preparing the filling In a large bowl, combine the fresh ricotta with the sugar, eggs, vanilla extract, and lemon zest. Use a fork or an immersion blender to achieve a smooth mixture. Make sure there are no large chunks of ricotta; the filling should be creamy and easy to spread. Once the filling is ready, set it aside to rest for a few minutes. Step 2: Preparing the pastry If using ready-made shortcrust pastry, take it out of the fridge and let it come to room temperature for 10 minutes. If you decide to make the pastry at home, mix 250 g of flour, 125 g of cold butter cut into cubes, and 1 egg, adding a little cold water until you achieve a smooth consistency. Roll out the pastry on a floured surface until it reaches a thickness of about 3 mm. Step 3: Forming the pastries Cut the pastry into squares of about 10 cm. On each square, add a spoonful of the ricotta filling, then fold the square diagonally to form a crescent shape. Press the edges with a fork to seal the pastry well. Repeat this process until you have used all the filling. Step 4: Baking Preheat the oven to 180 degrees Celsius. Place the pastries on a baking sheet lined with parchment paper and brush them with the beaten egg for a golden, shiny crust. Bake for 20-25 minutes or until the pastries turn golden and crispy. Step 5: Serving Allow the pastries to cool slightly before dusting them with powdered sugar, if desired. These sweet ricotta pastries are delicious either warm or at room temperature. Serve them alongside a cup of espresso or a fragrant tea to complement their flavors. Variations: If you want to experiment, you can add various ingredients to the ricotta filling. For example, try adding raisins, chopped nuts, or even dark chocolate for an extra flavor boost. Also, for a more exotic touch, a pinch of cinnamon or nutmeg can completely transform the taste. These sweet Tuscan sfoglie are a true culinary delight, easy to make and full of personality. Enjoy every bite and let the flavors of Italy carry you away!

Preparation

Take 2 sheets of puff pastry, roll out the first one, sprinkle with granulated sugar, roll tightly, continue with the second sheet, let it chill for a bit, cut into segments of 1.5-2 cm, roll out with a rolling pin, fill with whatever you want (I used ricotta with egg, sugar, and raisins; they used jam or Nutella). Bake in the oven at 220°C for about 15-20 minutes. Enjoy! The sweet ricotta pastry recipe was suggested by Stella on the recipe forum.
