Căpșunica cake with strawberries and chocolate cream

Căpșunica cake with strawberries and chocolate cream is usually served on special occasions, with a cocoa sponge cake soaked in syrup, chocolate cream and fresh strawberries. The cream covers it in a soft layer, while sliced fruit and colorful sprinkles give it a cheerful finish. I choose firm strawberries so the slices hold their shape on top of the cream. Preparation: 20 minutes. Cooking: 2 minutes. Total time: 22 minutes. Servings: 8. Approximately 500 kcal and 7 g protein per serving.
Ingredients
For the syrup
- 100 ml water
- 1 sachet vanilla sugar (8 g)
- 1 teaspoon vanilla essence
- 1 teaspoon rum essence
- 1 teaspoon almond essence
For the cream
- 1 store-bought cocoa sponge cake (400 g)
- 400 ml liquid whipping cream
- 2 sachets chocolate Creme Ole
For decorating
- 1 can whipped cream for decorating (250 g)
- 400 g strawberries
- 20 g colorful sprinkles
Preparation
1. Put the water, vanilla sugar and 1 teaspoon of each essence in a small saucepan. Stir over the heat for 2 minutes, until the sugar dissolves. 2. Place the cocoa sponge cake on a large plate and soak it with all the liquid from the saucepan. 3. In a bowl, mix the liquid whipping cream with the 2 sachets of chocolate Creme Ole until you have a thick cream. 4. Spread the cream over the sponge, then use the rest to finish the top and sides of the cake. 5. Decorate with the whipped cream. Slice the strawberries and arrange them on the cake, then scatter over the colorful sprinkles.
Notes
Serve in slices with black tea. Keep the cake covered in the fridge and eat it within 3 days. You can replace 100 g of the strawberries with the same amount of raspberries. Choose firm strawberries, and dry washed ones well before slicing them; very ripe fruit releases more juice. I take my time spreading the cream. I put it in the center first, then work it toward the edges with short strokes so I don't lift the crumbs.
Frequently asked questions
Can I use frozen strawberries?
Yes, let them thaw for 8 hours in the fridge, then drain and pat them dry well before placing them on the cake.
How should I slice the strawberries for decorating?
Cut them into slices about 5 mm thick so they sit easily on the layer of cream.
Can I replace the cocoa sponge with a plain one?
Yes, you can use a 400 g plain vanilla sponge and soak it the same way.
