Quick skillet pizza

Quick skillet pizza cooks covered over low heat and doesn’t need an oven. The yogurt-and-egg dough stays soft, topped with tomato sauce, salami and cheese. I prefer the salami sliced thin. Prep: 10 minutes. Cook: 10-12 minutes. Total time: 20-22 minutes. Servings: 2. About 400 kcal and 18 g of protein per serving.
Ingredients
- 1 egg
- 3 tablespoons yogurt
- 7 tablespoons flour
- 1/2 teaspoon salt
- 1/2 sachet baking powder
- 1 1/2 tablespoons oil
- 5 g butter
- 30 g tomato sauce
- 50 g salami
- 50 g cheese
- 1/2 teaspoon dried herbs
Preparation
1. Mix the yogurt with the egg. In a separate bowl, mix the flour with the salt and baking powder, then add them to the yogurt and egg along with the oil. Stir until you have a dough that’s thicker than pancake batter. 2. Grease a 24 cm nonstick skillet with the butter and pour in the dough. Spread the tomato sauce over the top. 3. Slice the salami thinly and place it over the sauce, then add the cheese and herbs. 4. Put the skillet on the large burner of the stove over low heat. Cover and cook for 10-12 minutes, until the base has set and the cheese has melted.
Notes
Keep in the fridge in a sealed container for up to 3 days; reheat the slices in a covered skillet over low heat until the cheese softens again. You can serve it with a simple green salad. You can use 50 g of ham instead of the 50 g of salami, and replace the cheese with 50 g of mozzarella; the dough contains gluten, dairy and egg. A 24 cm nonstick skillet keeps the dough at a suitable thickness, without getting too thick in the middle. Thick tomato sauce works better than a watery one, which can leave the base damp under the topping. If the edge browns before the cheese melts, lower the heat and keep the skillet covered.
Frequently asked questions
Can I use dry-cured salami?
Yes. Slice it about 2 mm thick, as thicker slices stay firmer under the lid.
How can I tell if the base is cooked?
Lift an edge with a spatula: the underside should be golden, and the center should no longer look liquid.
Can I replace some of the flour with whole wheat flour?
Yes, replace no more than 2 of the 7 tablespoons with whole wheat flour; the base will turn out denser.
