To prepare this delicious cheesecake with fruits, we will start with a simple, easy-to-make base. In a large bowl, we combine 200 g of flour with 100 g of sugar, 1 packet of baking powder, and a pinch of salt. In another container, we beat 3 eggs with 100 ml of oil and 100 ml of milk, then add the wet mixture to the dry one. We mix well until we obtain a homogeneous composition, without lumps. We pour the mixture into a rectangular pan, preferably with a removable edge, lined with baking paper. We bake the base in a preheated oven at 180°C for about 25-30 minutes or until it turns golden and passes the toothpick test. After the base has completely cooled, we remove it from the pan and prepare to soak it with the juice from our favorite compote, which will provide extra moisture and flavor. Meanwhile, we take care of the delicious cheese cream. Using a mixer, we mix 500 g of cottage cheese until it becomes creamy and smooth. We add 150 g of honey, the grated zest of one lemon, and its juice, mixing well to combine the flavors. Separately, we dissolve 10 g of gelatin in 100 ml of water over low heat, being careful not to boil it. Once the gelatin has cooled slightly, we incorporate it into the cheese mixture, stirring constantly to avoid lumps. Then, we add 300 ml of whipped cream and gently fold it in with a spatula until well combined. Once the cream is ready, we pour a generous layer of it over the soaked base. We then place the blackberries and halved peeled apricots on top, making sure to distribute them evenly for a nice appearance. To bind the fruits and give them a glossy look, we prepare a layer of Tort-Gelee according to the instructions on the packet, but instead of water, we use cherry syrup, which will enhance the cake's flavor. After we finish assembling the cake, we let it chill for a few hours, ideally overnight, so that all the flavors blend perfectly. Once it has set, we can portion it as desired. This cake is not only delicious but also a true feast for the eyes, thanks to the vibrant colors of the fruits. Enjoy!
