Blackberry jam and walnut puff pastry parcels

Blackberry jam and walnut puff pastry parcels go into the oven for about 20 minutes after the puff pastry has thawed in the fridge. The little squares come out golden and crisp around the edges, with a soft jam and walnut filling. I make sure the pastry sheet is cold and pliable before cutting it. Prep: 20 minutes. Cook: 20 minutes. Rest: 2 hours. Total time: 160 minutes. Serves: 4. About 580 kcal and 6 g protein per serving.
Ingredients
- 1 sheet of Bella puff pastry (400 g)
- 4-5 tablespoons toasted and ground walnuts
- 180 g homemade blackberry jam
- 20 g vanilla icing sugar
Preparation
1. Leave the puff pastry sheet to thaw in the fridge for 2 hours, until pliable but still cold. 2. Mix the blackberry jam with the toasted and ground walnuts until the filling is smooth. 3. Cut the pastry sheet into squares. Put a teaspoon of filling in the middle of each one, bring the edges together and press them lightly with a fork. 4. Place the parcels on a baking tray lined with baking paper. Bake at 180°C for about 20 minutes, until golden. 5. Dust with vanilla icing sugar.
Notes
Puff pastry sheets can vary in thickness, and thinner ones brown faster, so check them towards the end of baking. Once thawed, the pastry should bend without cracking and still feel cold to the touch; if it softens on the counter, chill it again before cutting. Smaller squares bake a little faster, while larger ones need their edges sealed well. They look like little folded strudels. Sealing the edges is the step you might be tempted to rush, but press them with a fork all the way across. Keep the parcels in a closed container in the fridge for up to 3 days; the puff pastry gradually softens. You can serve them with black tea. Cherry jam can replace the blackberry jam in the same amount; puff pastry contains gluten, and walnuts are an allergen.
Frequently asked questions
Can I replace the walnuts with almonds?
Yes, use 35 g of toasted and ground almonds instead of the walnuts.
Why does the filling leak out during baking?
Choose a thick jam and leave about 1 cm clear to the edges so you can seal the parcels well.
Can I make little crescents instead of triangles?
Yes. Put the filling near one corner of the square, roll towards the opposite corner and curve the ends slightly.
