Oven-baked potatoes with meatballs

Delicious Recipe for Oven-Baked Potatoes with Meatballs Preparation time: 20 minutes Baking time: 1 hour Total time: 1 hour and 20 minutes Number of servings: 4-6 There are days when life takes us down busy roads, and cooking becomes a challenge. This was the case this week when, after a full and exhausting period, I decided that Sunday should not be a flavorless day. I replaced the rules with the desire to create something delicious, quick, and inviting. Thus, I arrived at the recipe for Oven-Baked Potatoes with Meatballs, a perfect combination of the rich taste of meatballs and the enticing aroma of baked potatoes. This recipe is ideal for a family meal but can also be a lifesaver when unexpected guests arrive. Ingredients To prepare this recipe, you will need the following ingredients: - 1 kg ground pork (or a mix of pork and beef, as preferred) - 3 slices of bread (preferably whole grain or dark, for added nutrients) - 3 eggs - 6 cloves of garlic - 2 onions - 2 teaspoons salt - 1/2 teaspoon pepper - a pinch of oregano - 2 teaspoons vegeta (or a mix of preferred spices) - 1 teaspoon sweet paprika - 2 kg potatoes (preferably red or white potatoes) - 150 ml oil (olive oil or vegetable oil) - Pepper, to taste Preparing the Meatballs 1. Preparing the ingredients: Start by peeling and chopping the onion and garlic. The onion will add moisture and flavor to the meatballs, while the garlic will provide that unmistakable taste. 2. The meatball mixture: In a large bowl, place the ground meat, soaked and squeezed bread, chopped onion, crushed garlic, eggs, salt, pepper, paprika, oregano, and vegeta. Mix the ingredients well with your hands or a spatula until a homogeneous mixture forms. 3. Shaping the meatballs: Shape the meatballs into balls or patties, with the size depending on your preferences. Don’t forget to make them uniform in size for even baking! Preparing the Potatoes 1. Preparing the potatoes: Peel the potatoes and cut them into quarters. Make sure to wash them well before cutting to remove any impurities. 2. Seasoning: Place the cut potatoes in a large bowl. Add the chopped onion, 100 ml of oil, salt, pepper, and a little oregano. Mix all the ingredients well, ensuring each potato is coated with oil and spices. 3. Arranging in the dish: Take a heat-resistant baking dish and place the potatoes mixed with onion and spices. This will be the base on which you will place the meatballs. Assembling and Baking 1. Adding the meatballs: Carefully place the meatballs on top of the potatoes in the baking dish. You can drizzle a little oil on each meatball to help them brown nicely during baking. 2. Adding water: Pour a glass of water over the potatoes before covering the dish with aluminum foil. This will help retain moisture during baking. 3. Baking: Preheat the oven to 200 degrees Celsius. Place the dish in the oven and let everything bake for 40 minutes. The aluminum foil will help cook the meatballs and potatoes evenly. 4. Browning the meatballs: After 40 minutes, remove the aluminum foil and let the meatballs and potatoes brown for another 15-20 minutes. This way, the meatballs will develop a golden crust, and the potatoes will turn into a crunchy delicacy. Serving Once everything is ready, take the dish out of the oven and let it cool slightly. You can serve this dish warm, alongside a mixed salad or pickles, which will add a note of freshness and a pleasant contrast of textures and flavors. Helpful Tips - Recipe variations: You can replace pork with chicken or turkey for a leaner option. You can also add fresh herbs, such as parsley or dill, for a more vibrant taste. - Calories and nutritional benefits: This recipe combines protein from meat, carbohydrates from potatoes, and vitamins from vegetables, making it a complete meal. A serving has approximately 600-700 calories, depending on the amount of oil used. Potatoes are an excellent source of vitamins B6 and C, while pork provides essential proteins for the body. Frequently Asked Questions - Can I use other types of meat for the meatballs? You can prepare the meatballs a day ahead and keep them in the fridge. You can bake them directly from the fridge; just adjust the baking time. - What side dish pairs best with this dish? Personal Note This recipe is one of my favorites, not only for its taste but also because it brings the family together around the table. I nostalgically remember Sundays spent with loved ones, savoring this warm dish, cooked with much love. I hope you find joy in every bite! Enjoy your meal!
