Eggplant salad with potato mayonnaise

Eggplant salad with potato mayonnaise is served cold, with little pieces of kapia pepper nestled in a soft mixture. The mashed potato holds the mayonnaise together, while the zucchini is mixed with roasted eggplant and onion to make a smooth salad, sprinkled with little cubes of kapia pepper. I cut the pepper into small cubes, but leave them big enough to show up in the salad. Preparation: 25 minutes. Cooking: 65 minutes. Resting: 90 minutes. Total time: 180 minutes. Serves: 6. Approximately 310 kcal and 5 g protein per serving.
Ingredients
- 1 kg eggplants
- 2 medium zucchini (600 g)
- 1 large potato (250 g)
- 1 large kapia pepper (150 g)
- 1 medium onion (150 g)
- 1 teaspoon salt
- 1 teaspoon mustard
- 150 ml oil
- 30 ml milk
- 1500 ml water
Preparation
1. Preheat the oven to 220°C. Place the whole eggplants and the kapia pepper on a baking tray and roast for 45 minutes, until the eggplants soften and the pepper skin is blackened in places. 2. Peel and seed the zucchini, cut it into cubes, then put it in a pot with the peeled potato, halved, and 1500 ml of water. Boil for 20 minutes, until the potato is easily pierced with a fork, then drain the vegetables and keep 30 ml of the cooking water. 3. Leave the roasted and boiled vegetables to cool for 30 minutes. Peel the eggplants and pepper, place them on a tilted cutting board and leave them to drain; leave the zucchini to drain too. 4. Mash the potato in a bowl, mix it with the mustard, then blend while gradually pouring in the oil. If the mayonnaise is too thick and the mixer struggles to turn, add up to 30 ml of milk or reserved cooking water. 5. Put the eggplants and zucchini in a blender and pulse briefly. Transfer the mixture to a bowl, add the finely chopped onion, 1 teaspoon of salt and the potato mayonnaise, then mix until smooth and adjust the salt. 6. Cut the kapia pepper into small cubes and fold it in at the end. Cover the salad and chill it for 60 minutes before serving.
Notes
Keep the salad covered in the fridge and eat it within 3 days. For a vegan version, use cooking water instead of the 30 ml of milk. Serve it with slices of toasted bread. The first time I came across it at home, it was already on a platter and nicely decorated; the gesture and the taste made me happy, so I made it too. Large eggplants may need a few extra minutes in the oven, until the flesh softens. I don’t rush the draining step. When buying eggplants, I choose firm ones with smooth skin and no soft spots.
Frequently asked questions
Can I use roasted and frozen eggplants?
Yes. Thaw 1 kg of eggplants and leave them to drain in a sieve for 30 minutes before putting them in the blender.
What should I do if the potato mayonnaise is too thick?
Add 15 ml of milk or cooking water at a time and blend again, until it moves easily in the bowl.
Can I replace the kapia pepper?
Yes, use 150 g of sweet red pepper and cut it into small cubes before adding it.
Which potato works well for mayonnaise?
A floury potato with a crumbly flesh mashes easily and blends more smoothly with the oil.
