Start by preparing a large pot, in which you will put water and a teaspoon of salt, then place it on the heat to bring the water to a boil. This step is essential because nokedli, or Hungarian dumplings, are best cooked in boiling water. In the meantime, we will focus on preparing the dough, a process that requires attention and patience to achieve the perfect consistency. In a large bowl, crack 2-3 eggs, depending on the desired quantity, and lightly beat them with a whisk or fork until the whites and yolks are evenly combined. Then, gradually add flour, alternating with yogurt, mixing constantly. It is important not to add all the ingredients at once to avoid forming lumps. Continue mixing until you achieve a smooth, soft, and slightly flowing dough, but firm enough not to run off by itself. If you notice that the dough is too thick, feel free to add a little extra yogurt. Once the dough is ready, it's time to turn it into nokedli. If you have a potato ricer, it will be very helpful; otherwise, you can use a simple teaspoon. Put the dough into the ricer and, with a back-and-forth motion, let it drop into the boiling water. If using a teaspoon, take small portions and let them flow into the water. Nokedli should boil for 3-4 minutes; you will notice they rise to the surface when they are ready. After they are cooked, remove the nokedli with a slotted spoon and let them drain. In the pot where they boiled, add a few tablespoons of oil and heat it well. Then, add the nokedli and gently mix them so that they are evenly coated with oil. This step will not only give them a better taste but will also prevent them from sticking together. Nokedli can be served in numerous ways. You can opt for a simple garnish of yogurt sauce mixed with a little garlic and dill, or you can combine them with crispy bacon. Additionally, a delicious variation is to serve them with pesto and grated cheese. These dumplings can also be an excellent side for a meat stew, adding a touch of flavor to the main dish.
