The crepe-paper-dyed egg appetizer develops colored speckles after just 2-3 minutes. The hard-boiled eggs are wrapped in crepe paper dampened with vinegar, and the colors come out uneven; I took inspiration from another idea, but mine weren’t as pretty, even though I found them interesting. I make them a few hours ahead and arrange them on a platter with fresh bread. Prep: 20 minutes. Cook: 9 minutes. Rest: 33 minutes. Total time: 62 minutes. Servings: 8. Approximately 210 kcal and 16 g protein per serving.

Ingredients

  • 20 eggs
  • 2 liters of water
  • 1 tablespoon of salt
  • 15 ml of vinegar for boiling
  • 200 ml of vinegar for the paper
  • 5 large sheets of crepe paper in different colors
  • 15 ml of oil

Preparation

1. Wash the eggs with dish soap and rinse them well. Put them in a saucepan with 2 liters of water, 1 tablespoon of salt and 15 ml of vinegar. 2. Boil them for 9 minutes from the moment the water starts to boil, then turn off the heat and leave them in the hot water for another 10 minutes. 3. Lift the eggs out onto a colander. Leave them to air-dry and cool for 20 minutes. 4. Divide the 200 ml of vinegar among several bowls, depending on how many colors you’re using. Cut the crepe paper into large pieces, crumple them, soak the pieces in vinegar and squeeze them out; wear gloves, because the paper stains. 5. Wrap each egg in the damp paper and leave it for 3 minutes. To use more than one color, remove the first piece of paper and apply another. 6. Unwrap the paper and leave the eggs to dry. Rub them with a cloth soaked in oil.

Notes

White-shelled eggs give brighter colors; on beige eggs, the shades come out more muted. Choose eggs that are about the same size, otherwise the small ones will set faster than the large ones in the same saucepan. For very large eggs, you can extend the boiling time by a minute, and check small ones after 8 minutes. Paper with visible pigment gives a stronger color than almost-white paper, and the shades may transfer with varying intensity. The speckles are reminiscent of homemade marbled eggs, but their outlines are more broken and unpredictable. Arrange them on a platter with fresh bread and thinly sliced radishes. For half the quantity, use 10 eggs and halve the water, salt and both amounts of vinegar. Hard-boiled eggs keep in their shells in the refrigerator for up to 3 days.
