Once you have achieved the desired consistency, wrap the dough in plastic wrap and place it in the refrigerator for about 30 minutes. This stage will allow the dough to cool and acquire a texture that is easier to handle. During this time, it is the ideal moment to prepare the filling. In a bowl, mix the ingredients with a whisk or using a mixer. Make sure everything is well combined to achieve a uniform and creamy filling. Pears are the stars of this dessert, so cut them in half, removing the seeds and their central core. These fruits will add a sweet-tart note and a pleasant texture to your tart. After the dough has been in the refrigerator, take it out and roll it out on a lightly floured surface. Use a rolling pin to obtain an even sheet, then place the dough in the tart pan. It may break in certain places, but don't worry; you can patch the dough with your hands so that it sits nicely on the bottom and sides of the pan. Once the dough is ready, pour in the prepared filling, being careful not to exceed half the height of the tart walls. Arrange the pears cut side up, placing them nicely for an attractive appearance. After the tart has cooled, you can pour over a glaze made from 200 grams of chocolate and 3 tablespoons of milk, melted in a double boiler, to give it a sophisticated look and intense flavor.
