The Annals of History (Nut Cake)

To create a delicious and refined dessert, we start by preparing all the necessary ingredients. You will need 140g of margarine, which should be at room temperature to mix more easily with the sugar. So, before you start, take the margarine out of the fridge a little while before you begin preparing. In a large bowl, add the 180g of powdered sugar. This will help achieve a fine and fluffy texture for the cake. Use an electric mixer or a sturdy spatula to cream the margarine with the sugar until the mixture becomes creamy and fluffy. It is important to pay attention to this step, as good aeration of the mixture will contribute to a fluffier cake. Once you have a homogeneous mixture, you can add the 140g of ground walnuts. The nuts will not only add a wonderful flavor but will also provide a pleasant texture. Make sure the nuts are finely ground so they integrate perfectly into the mixture. Mix everything with a spatula, being careful not to let the margarine and sugar separate. The next step is to prepare the egg whites. Carefully crack 4 eggs and separate the egg whites from the yolks. Whip the egg whites until they become firm and glossy. It is essential that the bowl and utensils used are completely clean, as any trace of fat can prevent the egg whites from whipping properly. Gently fold the whipped egg whites into the margarine and walnut mixture using a spatula, through a gentle folding motion, to preserve the air in the egg whites. This will help create a light and fluffy texture. Once you have a uniform mixture, prepare a baking tray. Grease the tray with margarine and line it with flour or parchment paper to prevent sticking. Preheat the oven to 175°C. Pour the mixture into the tray and level the surface with a spatula. Place the tray in the preheated oven and bake the cake for about 30-35 minutes, or until it turns golden and passes the toothpick test. When ready, let the cake cool in the tray for a few minutes, then transfer it to a wire rack to cool completely. This walnut and egg white cake will bring a special flavor and a slightly crispy texture on the outside but soft on the inside. You can serve the cake plain or with a sprinkle of powdered sugar on top for a more elegant look. Enjoy every bite of this delicacy!
