To prepare the sweet pumpkin puree huajuan, we will start by dissolving the yeast in warm water. This step is essential, as the activated yeast will help the dough rise and become fluffy. After mixing the yeast well with the water, we pour this solution into the previously prepared sweet pumpkin puree, ensuring that the ingredients blend perfectly. The pumpkin puree not only adds a subtle flavor but also a vibrant color to the dough. Next, we add sugar to the flour, mixing well to ensure it is evenly distributed. Once we have achieved this mixture, we add the sweet pumpkin puree and begin to knead the dough. It will be a bit sticky at first, but don't worry, as you knead, the ingredients will come together. After obtaining a homogeneous dough, we cover it with a lid or a damp cloth and let it rise in a warm place for 3-5 hours until its volume increases by 1.5 times. After the dough has risen, we sprinkle flour on the work surface and knead the dough again to remove the air. This is an important step, as excess air can affect the final texture of the huajuan. We cut the dough into pieces of about 50 grams, which we twist by hand into sticks about 10 centimeters long. From one of these pieces, we will create an olive shape that will become the stamina of the huajuan, while the other five pieces will be rolled out into thin sheets. To create the rose shape, we layer the sheets of dough, leaving space between them. We draw a deep line in the center of the sheets with a chopstick, and then place the olive-shaped dough on the base sheet. We roll the sheets from bottom to top, breaking the roll in the middle where we drew the line. The resulting petals can be shaped as desired, and thus we will have two beautiful "roses" ready to be cooked. To cook the huajuan, we pour water into a steaming pot and lay a water-soaked cheesecloth on the perforated plate. We place the "roses" on the cheesecloth, leaving enough space between them to cook evenly. We cover the pot with a lid and let the huajuan steam for 10-15 minutes. After the water has started to boil, we let the huajuan steam for another 10-15 minutes, ensuring that the steam penetrates the dough well. Finally, we turn off the heat and open the lid only after a few minutes, letting the "roses" cool slightly before removing them to a plate. To prepare the sweet pumpkin puree, we cut the pumpkin into pieces, removing the seeds, and steam it until it becomes soft. After boiling it, we remove the skin and mash the pulp. It is important to add the puree gradually to the flour to adjust the dough's consistency, and the amount of sugar can be modified according to preferences. This recipe will not only surprise with its appearance but will also bring a unique taste, full of flavors, that will delight everyone.
