Colorful and Cheerful Desert

I made this dessert for the first time when I wanted to bring some color and something new to the table during a time when no one was really in the mood for anything sweet. The dessert keeps well in the fridge and is full of colors from the fruits, not from syrups or complicated creams. Line a large loaf pan with plastic wrap, including the edges. This will make it much easier to remove the dessert at the end. 2. Layer 1. Crumble the cookies as finely as you can. I used a mortar, but you can also use a bag and a rolling pin. Crush the nuts, but not too finely. Mix the nuts, crushed cookies, oats, honey, and melted butter. Combine well, then press the mixture firmly into the bottom of the pan using the back of a spoon to create a compact layer. Place the pan in the fridge for 30 minutes. 3. Layer 2. Juice the apples, oranges, carrots, and beetroot. The quantities above yield about 500 ml of juice. Set aside 100 ml of this juice and hydrate the gelatin in it for 10 minutes. Then, gently heat the mixture over low heat, stirring continuously without letting it boil, until the gelatin is completely dissolved. Combine with the remaining juice, add the sweetener or sugar, and mix well. Pour this mixture over layer 1 in the pan. Refrigerate for 30-40 minutes until it sets. 4. Layer 3. Hydrate the gelatin directly in the cold whipping cream for 10 minutes. Then, gently heat the mixture without boiling it, just until the gelatin is completely dissolved. In a vertical blender, combine the cream with the dissolved gelatin, sweet cheese, sweetener, and vanilla. Process until you achieve a smooth cream. Gently spread it over layer 2, level it out, and return to the fridge until it sets. 5. Layer 4. Place the strawberries (I used frozen) in a small pot over heat for 5-10 minutes, just enough to soften them. Then puree them with a blender. Hydrate the gelatin in 50 ml of cold water for 10 minutes, then mix well into the warm strawberry puree along with the sweetener until everything is dissolved. Allow it to cool to room temperature (not completely cold, but not hot either), then pour it over the cream layer. Refrigerate overnight or at least for 3-4 hours. 6. Finally, carefully remove the dessert from the pan, remove the plastic wrap, and decorate it with whatever you have on hand: chocolate decorations, mint leaves, or pieces of fruit. Cut into slices with a sharp knife. Why I Make This Recipe Often It’s easy to adapt with any fruits I have at home. It doesn’t require baking and holds up well in the fridge from one day to the next. It’s not too sweet and is suitable if you want a light dessert with fresh or frozen fruits. Tips and Variations Tips If you don’t have a food processor, you can crush the cookies and nuts with a mortar or even a bottle. Use the loaf pan for straight layers, but any not too wide and deep pan will work. Be patient in the fridge between layers; otherwise, they will mix. Variations You can make just two layers, with a cookie base and one cream layer. If you want a denser dessert, use more gelatin in each layer (not double, but +2-3 grams). Preparation
For this dessert, we prepare a large loaf pan. We line the pan and its edges with plastic wrap. For layer 1: since my mixer broke, I used a mortar... so I crushed the biscuits, then the nuts, but not too finely, mixed them, and added the oats, honey, and melted butter. I mixed all the ingredients well and placed the first layer at the bottom of the loaf pan. I leveled and pressed the mixture with the back of a spoon. It goes into the fridge for 30 minutes. For layer 2: the mentioned fruits are passed through a juicer. In 100 ml of juice, soak the gelatin for 10 minutes, then heat it over low flame, but do not let it boil, and stir until the gelatin is completely dissolved. Add this to the remaining juice, the sweetener (I used powdered fructose), pour it over layer 1, and refrigerate for 30-40 minutes until the mixture sets. For layer 3: hydrate the gelatin in whipped cream, heat it, and stir until completely dissolved. Put it in the vertical mixer, add the cheese, sweetener, and vanilla. Blend well until fully homogenized. Pour it over layer 2 and refrigerate again until it sets. For layer 4: boil the strawberries for 5-10 minutes until the fruits soften. Puree the fruits using the vertical mixer or your kitchen blender. Hydrate the gelatin in 50 ml of water, add it to the warm fruit puree, along with the sweetener, and mix until the gelatin dissolves. Let it cool and pour over layer 3. Refrigerate until the dessert is fully set, or overnight. Remove from the loaf pan, take off the plastic wrap, decorate as inspired, slice, and serve. Enjoy!!! Use your favorite fruits or those you have in the freezer. My dessert is not very sweet, so you can replace the sweetener with sugar to taste. It can be served with a chocolate topping or fruits and decorated with mint leaves (that's how I would have liked it, but I didn't have any).
