Rice with green beans and Gorgonzola cheese

To prepare a savory and nutritious dish, we start by cleaning and washing a handful of green bean pods, which we will chop finely, so that the pieces are about 5 mm. Then, in a non-stick pan, we will add 1-2 tablespoons of olive oil or sunflower oil, along with a pinch of salt, to enhance the flavors. We place the pods in the pan, cover with a lid, and let them sauté over low heat, stirring occasionally, during which the flavors will blend beautifully. In parallel, we bring water to a boil in a separate pot, adding a bouillon cube or, if we want a healthier option, freshly made vegetable broth. When the green bean pods have softened slightly, we add the cleaned and washed rice, considering a portion of 160 grams for two people. We let the rice sauté lightly alongside the beans, so it absorbs the flavors from the pan. We begin to pour the hot broth from the pot, using a ladle, adding it gradually, one ladle at a time. It is important to stir almost continuously to prevent the rice from sticking to the bottom of the pan and to ensure even cooking. We will repeat the process of adding broth until the rice absorbs the liquid and the broth reduces. In total, to achieve 'al dente' rice, we may need about 6 ladles of broth, and the total cooking time will be 17 minutes, according to the instructions on the rice package, but it is essential to check its consistency. When the rice is ready, we turn off the heat and add the Gorgonzola cheese, cut into small cubes. We mix well so that the cheese melts and incorporates evenly into the dish. The Gorgonzola cheese will add a creamy note and an intense flavor that will transform this simple dish into a real delight. We serve immediately, garnishing with a little chopped fresh parsley if desired, and enjoy a healthy dish full of flavor and colors. It is a perfect recipe for a quick dinner but also to impress guests at a festive meal. Enjoy your meal!
