Mushroom Bruschetta

To prepare a mashed potato dish with mushrooms and telemea cheese, start by peeling the potatoes. Choose medium-sized potatoes that are firm and without spots. Cut them into cubes of about 2-3 cm to cook evenly. Place them in a pot with cold water, add a pinch of salt, and let them boil over medium heat. After about 15-20 minutes, the potatoes should be soaked enough but not so soft that they turn into mash. Test them with a fork; if it goes in easily, they are ready. Meanwhile, prepare the filling. Peel and julienne the onion, and clean and chop the mushrooms, preferably fresh, into small pieces. In a deep pan, heat a little olive oil and add the onion. Let it sauté over low heat, stirring occasionally, until it becomes transparent. Then, add the mushrooms and continue cooking the mixture. The mushrooms will release water, and you need to let them cook until it evaporates completely. Finally, pour in a little dry white wine, salt, and pepper, allowing the mixture to simmer on low heat for a few minutes until the wine reduces. Once the potatoes are cooked, drain them and mash them using a mixer or a fork. Add the melted cheese and mix well until you achieve a fine and creamy mash. After the mushrooms have cooked and cooled slightly, strain them to remove excess liquid and add them to the mashed potatoes. Mix everything well, ensuring that the mushrooms are evenly distributed in the mixture. Then, add the grated telemea cheese and sour cream, continuing to mix until the ingredients are perfectly integrated. In another step, prepare the slices of bread. Choose rustic bread or a fresh baguette. Cut slices about 1-2 cm thick and arrange them on a tray. Drizzle with olive oil and place them in a preheated oven at 180 degrees Celsius for about 10 minutes or until they turn golden. After they have browned on one side, carefully flip them and drizzle again with oil, letting them brown on the other side. Finally, take the bread out of the oven and generously spread the mushroom and telemea mash on each slice. Serve them warm, alongside slices of fresh tomatoes for a delicious contrast. This recipe is perfect for a savory appetizer or even a main dish.
