Grilled Pleurotus Mushrooms

Mushrooms are a versatile and delicious ingredient, perfect for a multitude of dishes. We start by carefully washing them under a stream of cold water, ensuring that all impurities are removed. It is essential to focus on cleaning them to enjoy all their natural flavor. After washing, we cut off the stems, as they are tougher and do not cook evenly on the grill. We leave only the caps, which are tender and flavorful. After this step, we place them in a colander to drain off the excess water, being careful not to leave them too long, so they don't lose their taste. In the meantime, we prepare a savory sauce that will add extra flavor to our mushrooms. In a bowl, we crush a few cloves of garlic, making sure to turn them into a paste. This ingredient will add a strong and unmistakable note to the dish. We add salt and olive oil over the garlic and mix well, so we obtain a homogeneous composition. We continue by introducing, one by one, quality mustard, sweet paprika for a touch of sweetness, hot paprika for a hint of spiciness, pepper to taste, and finally, a teaspoon of sugar to balance the flavors. We mix everything carefully, ensuring that each ingredient is well incorporated. Once the sauce is ready, we take each mushroom cap and brush it with this delicious mixture, being careful to cover the entire surface. This process will make the mushrooms absorb the flavors of the sauce during cooking. After we finish brushing all the mushrooms, we stack them on top of each other in a dish, cover them with plastic wrap, and place them in the refrigerator for about an hour. This marinade will enhance their taste and make them more tender. After they have been in the fridge, it’s time to put them on the grill. We heat the grill to medium heat, and the mushrooms are placed with the gills facing up. We let them cook for about 7 minutes on one side, then carefully turn them over, continuing to cook for another 7 minutes on the other side. The mushrooms will develop a nice browned crust, and the flavors will intensify. Finally, we take them off the grill and serve them warm, as an appetizer or as a side dish. These grilled mushrooms are not only delicious but also healthy, making them an excellent option for all food lovers.

- 1 kg of larger pleurotus mushrooms
- 4 tablespoons of sunflower oil
- 1 tablespoon of mustard
- 2 teaspoons of sugar
- 1 teaspoon of sweet paprika
- 1 teaspoon of salt
- 1 teaspoon of hot paprika
- 2 larger heads of garlic (I used 4 smaller ones)
