There are days when I need something quick and warm, without spending too much time in the kitchen. These wraps with cheese, green onions, and cherry tomatoes are among my favorites. I make them when I have leftover wraps and small cherry tomatoes, either from the market or the fridge. I place them on a tray, add everything I need, and put them in the oven just enough for the cheese to melt and the edges to get a little color. Nothing is left at the end. Preheat the oven to a medium temperature (180-200°C). I lay baking paper on the tray to prevent the wraps from sticking. 2. I place the wraps on the tray, side by side, without overlapping. 3. On each wrap, I put a slice of Delaco cheese, large enough to cover the center. 4. I wash and clean the green onions, then chop them finely. I sprinkle them over the cheese, without overdoing it. 5. I wash the cherry tomatoes and pluck them from the sprig. If they are very small, I leave them whole; if they are larger, I cut them in half. I place them over the layer of onions. 6. I sprinkle salt and pepper to taste, without exaggerating (the cheese is already quite salty). 7. I put the tray in the oven and leave it for 8-10 minutes, just enough for the cheese to melt and the wrap to get a slight crust on the edges. If I use the ventilation function, I make sure not to dry out the wraps too much. 8. I take the tray out, immediately sprinkle a little basil. If I have fresh, I tear a few leaves; otherwise, I use dried. 9. I serve immediately while they are warm. Why I make this recipe often I like to make these sandwiches because they are quick to prepare and I don't need complicated ingredients. If the wraps are very thin, I leave them in the oven a little less to avoid them becoming completely crispy. It’s important to add the basil after taking the tray out of the oven, not before. Substitutions I can use any sliced cheese, not just Delaco, as long as it melts well. Green onions can be replaced with a little very finely sliced red onion.
