Piatou Cream, Caramelized Apples, and Dried Apple Wafers

Creme Piatou is a refined Greek dessert that we have enhanced with a delicious combination of caramelized apples and dried apple puree. This light and savory dessert is a perfect choice for any occasion, and its preparation is a true culinary pleasure. We start by heating a glass of milk together with sugar and lemon zest, being careful not to reach the boiling point. This stage will infuse the milk with the delicate flavors of lemon, providing a fresh and vibrant taste. In a separate bowl, we mix the remaining milk with the cornstarch, ensuring it dissolves completely and no lumps remain. Once the flavored milk has been removed from the heat, we add the milk and cornstarch mixture, stirring continuously to avoid lumps. We put the pot back on low heat, stirring patiently until the mixture reaches the consistency of a creamy pudding. After achieving the desired texture, we remove the pot from the heat and take out the lemon zest. In another bowl, we beat the egg yolks until they become a fine cream. We slowly add this mixture to our pudding, constantly stirring to integrate the ingredients without cooking the eggs. We put the mixture back on the heat for 2-3 minutes, stirring continuously to prevent sticking. Now, let’s take care of the caramelized apples. We peel the apples and remove the core, then slice them into round pieces. We caramelize the sugar in a pan, and when it turns golden, we add the apples and a dash of cinnamon, letting them cook until they become soft and infused with the caramel aroma. For the apple puree wafer, we need 500 grams of peeled apples, which we will sauté with a little water until soft. After they cool down, we blend them with a hand mixer until we achieve a fine puree. Once we have the desired consistency, we keep the puree on the heat until all the water evaporates. Then, we spread the puree on a silicone tray and leave it in the sun for about 24 hours to dry. Alternatively, we can use the oven, leaving it on low heat with the door slightly open for a few hours. After the wafer has dried, we cut it into circles that will be rolled. Now, let’s move on to assembling the dessert. We choose a desired mold and add a layer of cream, followed by the caramelized apples and another layer of cream. I used a silicone muffin mold to assemble them, and then I turned them out onto plates. Although they can be left in the fridge to cool, no one in the family had the patience to wait. To decorate the dessert, we add caramelized apples, the dried apple wafer, a few mint leaves, and a sprinkle of cinnamon. Optionally, we can also add whipped cream for extra flavor. This dessert will surely become a favorite for everyone, thanks to its combination of textures and irresistible flavors.

- Cream: 550 ml of milk
- peel of one lemon
- 5 tablespoons of starch
- 6-10 tablespoons of sugar (I used 6)
- 2 egg yolks. Caramelized apples: 500 g apples
- cinnamon Kotanyi
- 2-4 tablespoons of sugar. Dried apple wafer: 500 g peeled apples.
