We stir constantly so that the onion cooks evenly until it becomes translucent and starts to soften. We add the chopped carrot, and the mixture will gain a special flavor as the vegetables caramelize. After a few minutes, we can add the pepper strips and the reserved juice. We season with salt, pepper, and a little chili powder to enhance the flavors. We continue to sauté everything over medium heat, stirring occasionally until the vegetables take on a golden color and a pleasant texture. Once the vegetables are ready, we add the corn kernels and well-drained sliced mushrooms. Then, we add the potato cubes, carefully mixing everything to avoid crushing the vegetables. We let the mixture cook for another 2-3 minutes so that all the ingredients blend harmoniously. We adjust the salt and pepper again, fine-tuning the taste to our personal preferences. Finally, we take the dish off the heat and incorporate the sour cream to create a creamy texture and rich flavor. We mix everything well, and now our dish is ready to serve. It can be enjoyed on its own or as a side dish to meat, sausages, alongside rice or pasta. It is also delicious in wraps, offering a nutritious and filling meal.
