Clementine Cake (with Juice)

To create a delicious clementine cake, we will start by preparing the ingredients and organizing ourselves in the kitchen. In a large bowl, we will cream the sugar with the whole eggs until we achieve a fluffy and creamy looking foam. This process is essential as it will help aerate the batter and give the cake a fluffy texture. Once we have obtained this foam, we gradually add the oil and clementine juice. It is recommended to strain the juice to remove any pulp or seeds, ensuring a fine mixture. We continue with the grated clementine zest, which will enhance the flavor of this dessert. After we have well integrated these ingredients, we will take another bowl with flour, to which we add the baking powder. It is important to sift the flour together with the baking powder through a sieve or a sifter to achieve an even mixture. After mixing the dry ingredients, we will incorporate them into the wet mixture using a spoon or mixer, until we obtain a homogeneous but quite soft dough. Finally, we add the raisins. It is good to toss them in a small amount of flour before adding them to the dough, as this will prevent them from sinking to the bottom of the cake during baking. However, if you forget this step, don’t worry! The raisins will add a delicious sweet flavor, even if they are mostly found at the base of the cake. Next, we prepare the pan in which we will bake the cake. We grease it with a little butter or oil, then sprinkle flour inside or place a piece of parchment paper at the bottom, which can be soaked in water and squeezed well to fit the shape of the pan. This will help prevent the cake from sticking. After preparing the pan, we pour the batter into it, making sure it is evenly distributed. We preheat the oven to 180 degrees Celsius and bake the cake for about 35 minutes, or until a toothpick inserted in the center comes out clean. Once the cake is ready, we let it cool a bit before removing it from the pan. Served plain or with a sugar glaze, this clementine cake is perfect to be enjoyed alongside a cup of tea or coffee, bringing a touch of freshness and flavor to every slice.
