Warm lentil salad with smoked sausage

Warm lentil salad with smoked sausage brings tender green lentils together with browned sausage, crisp celery, red onion and parsley. This autumn lentil salad takes 48 minutes and is tossed warm with a mustard and red-wine-vinegar dressing. Use green or brown lentils; red ones soften too much for this. Prep: 15 minutes. Cook: 33 minutes. Total time: 48 minutes. Serves 4. About 580 kcal and 27 g protein per serving.
Ingredients
For the lentils
- 250 g green or brown lentils (rinsed)
- 1 bay leaf
- 1 tsp fine salt
- 1.5 L water
For the skillet
- 300 g smoked sausage (sliced)
- 1 small red onion (finely diced)
- 2 celery stalks (thinly sliced)
For the dressing
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/4 tsp black pepper
To finish
- 15 g flat-leaf parsley (chopped)
Preparation
1. Rinse the lentils and put them in a saucepan with the bay leaf, salt and water. Bring to a boil, then simmer uncovered for 25 minutes, until tender but still intact. 2. Heat a skillet over medium-high heat. Add the sausage slices and cook for 5 minutes, turning once or twice, until browned at the edges. Add the red onion and celery and cook for 3 minutes, stirring; the onion should soften while the celery keeps a little crunch. 3. Whisk the olive oil, red wine vinegar, Dijon mustard, honey and black pepper in a small bowl. 4. Drain the lentils and discard the bay leaf. Toss the warm lentils with the dressing, sausage, onion and celery. Fold in the parsley and serve warm.
Notes
Older lentils can take another 3–5 minutes to soften, so taste one before draining. Smoked sausages vary in salt; try a bite of the finished salad before adding more. For a meat-free version, replace the sausage with 250 g sliced mushrooms and cook them in 1 tbsp olive oil until browned. Serve with dark rye bread or boiled potatoes. Keep leftovers covered in the fridge for up to 3 days; warm gently in a skillet with a spoonful of water.
Frequently asked questions
Can I use canned lentils?
Yes. Drain and rinse 2 cans (400 g each), then skip the simmering and fold them in with the dressing.
What can I use instead of red wine vinegar?
Use 1 tbsp cider vinegar in its place. The dressing will still have the same sharpness.
Can I serve the salad at room temperature?
Yes. Let it stand for 20 minutes after tossing, then serve; the lentils will take up more of the dressing as they sit.
