Zepter tomato soup

Zepter tomato soup simmers with tomatoes and vegetables, then the rice softens in the pot after it’s taken off the heat. Round-grain rice thickens it slightly, and the simple taste finally reminded me of kindergarten soup and cooking around 1975. I prefer it cold, once it has cooled completely. Prep: 20 minutes. Cook: 47 minutes. Total: 67 minutes. Servings: 6. Approximately 180 kcal and 4 g protein per serving.
Ingredients
- 5 scallions
- 50 ml olive oil
- 1 medium carrot (100 g)
- 1 medium green bell pepper (150 g)
- 1500 g tomatoes
- 2 g iodized salt
- 5 g lovage (1 sprig)
- 75 g round-grain rice
Preparation
1. Clean and finely chop the 5 scallions. Add them to the Zepter pot with 50 ml olive oil and cook over medium heat for 2 minutes, uncovered, until softened. 2. Peel the carrot and green bell pepper, then finely chop them. Add them to the onion, cover the pot and cook over medium heat for 5 minutes, until softened. 3. Peel and finely chop the tomatoes. Add them to the pot with 2 g salt and the lovage, cover and cook over medium heat for about 10 minutes, until the lid indicator reaches the green zone. 4. Remove the lid, add the rice and stir until it is evenly distributed through the soup. Put the lid back on, turn off the heat and leave the pot covered for 30 minutes, until the rice softens.
Notes
Well-ripened tomatoes that are soft when pressed make a more flavorful soup; pale ones have less flavor. If the tomatoes are very juicy, the soup will be thinner, since no water is added. I don’t rush the moment when the indicator enters the green zone, or the 30 minutes off the heat, while the rice absorbs the liquid in the pot. The soup keeps in the refrigerator for up to 3 days. The rice makes it gluten-free, provided it is packaged without traces of contamination; without it, the texture will be thinner. Serve it cold with fresh bread.
Frequently asked questions
What can I use instead of lovage?
Use 5 g finely chopped fresh parsley. The flavor will be different, but it goes well with tomatoes.
Can I use canned tomatoes?
Yes, use 1500 g whole peeled tomatoes, drained. There’s no need to peel them.
What should I do if the soup is too sour?
Stir 1 teaspoon sugar into the hot soup after the rice has softened.
