Chocolate Fruit Cake - a decadent experience for dessert lovers Preparation time: 30 minutes Baking time: 25-30 minutes Total time: 1 hour Number of servings: 8 If you are looking for a quick and impressive dessert, the chocolate fruit cake is the perfect choice. This cake not only looks spectacular but is also incredibly delicious, combining the richness of chocolate with the freshness of fruits. In this recipe, I will guide you step by step, providing useful tips to achieve a perfect result. Ingredients for the base: - 4 egg whites - 2 egg yolks - 100 g sugar - 50 g quality cocoa powder - 50 g flour - A pinch of salt Ingredients for the chocolate cream: - 200 g dark chocolate (minimum 70% cocoa) - 200 ml heavy cream - 2 tablespoons powdered sugar (optional, depending on preferences) Ingredients for decoration: - Fresh fruits (strawberries, raspberries, blueberries, or any other fruits you prefer) - Mint leaves for garnish Preparation method: 1. Start by preheating the oven to 180°C. It is essential to have the oven well heated before placing the cake in, to achieve even baking. 2. In a bowl, beat the egg whites with a pinch of salt until foamy, then gradually add the sugar. Continue beating until you achieve a firm, glossy meringue. This step is crucial as the air incorporated into the egg whites will make the cake light and fluffy. 3. In another bowl, beat the egg yolks until frothy. Add the sifted cocoa and flour, mixing gently to avoid lumps. Then, fold in a third of the egg white meringue to lighten the mixture. 4. Add the remaining egg whites and mix with a spatula, using gentle up-and-down motions. This will keep the cake's texture airy. 5. Pour the mixture into a cake pan lined with parchment paper and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan. 6. Meanwhile, prepare the chocolate cream: melt the chocolate in a double boiler or microwave, being careful not to burn it. In another bowl, whip the heavy cream with the powdered sugar until firm. Add the melted chocolate and gently fold with a spatula. 7. Once the base has cooled, cut it into two or three layers, depending on your preference. Fill each layer with chocolate cream and fresh fruits. You can add a few slices of fruit between layers for extra freshness. 8. Decorate the cake with the remaining chocolate cream and arrange fresh fruits on top. Add a few mint leaves for an elegant and fresh look. Helpful tip: If you want an even more sophisticated cake, you can add a fruit syrup or a chocolate glaze for extra flavor. Serving suggestion: Serve the chocolate fruit cake alongside a scoop of vanilla ice cream or a dollop of whipped cream for an even more decadent experience. This chocolate fruit cake is perfect for any occasion, from parties to romantic dinners. With each slice, you will bring smiles to the faces of your loved ones!
Preparation
Base: 1/2 of the egg whites are mixed with the whipped yolks, cocoa is added, mixed, then the remaining egg whites are added and gently mixed. Bake at 180°C for 20-25 minutes. After cooling, cut in half. Mix 250ml of syrup (so 150ml more than the recipe because the agar needs more liquid, even so it was at the limit) with 25g of agar-agar (powder) until the agar is well dissolved, then place the pot on medium heat. Stir continuously until it starts to boil, then keep on low heat for about 2 minutes, stirring continuously. Turn off the heat and pour over the hot agar, adding the whipped cream little by little while mixing quickly. Then add the yogurt in the same way, little by little, mixing well, and then the well-drained fruits. Chill for a few minutes to set slightly, then remove, mix, and pour over the first layer of the base. Cover with the second layer, press down slightly, and refrigerate. Reserve a few pieces of mango for decoration, and puree the rest (about 400g). Dissolve 20g of agar-agar (powder) in 400ml of syrup, then heat while stirring, and when it starts to boil, reduce the heat and continue for about 2 minutes, stirring continuously. Remove from heat and pour the mango puree over the hot agar, little by little, mixing quickly and well each time. Pour over the base, level it out, and decorate. Chill again for an hour. Warm some jam that has been strained and use it to glaze the decorative fruits. Chill again. The Chocolate Fruit Cake recipe was proposed by CristinaK.
