Vegetables for Soups, Broths... in a Jar

Vegetables are essential in Romanian cuisine, adding a boost of flavor and aroma to the dishes. The first step is to ensure that all ingredients are fresh. We start by cleaning the vegetables, making sure there are no traces of impurities. With a stream of cold water, we wash each ingredient well, removing any residues. For tomatoes, we use a simple technique: we blanch them in hot water for a few minutes, which will help us easily remove the skin. Once peeled, we slice them thinly, taking care to keep them uniform so they combine harmoniously with the other ingredients. The peppers, in turn, need to be cleaned and thoroughly washed, so that no seeds remain that could alter the taste of the final dish. The onion, peppers, and tomatoes will be cut in a similar shape, to ensure an even distribution of flavors. Carrots, celery, and parsley will be grated with a small grater or passed through a meat grinder, thus obtaining a fine texture that will enrich the composition. Celery and parsley leaves will be finely chopped, adding a touch of freshness and greenery to our dish. Once all the ingredients are prepared, we weigh everything to ensure we respect the correct proportions. For every kilogram of vegetables, we add 220 grams of salt. For example, if we obtained 15 kilograms of mixture, we will need to use 3 kilograms of salt. We carefully mix the vegetables with the salt in a large bowl, ensuring that the salt is evenly distributed. It is important for the mixture to sit until the next day, at which point it will allow the flavors to intensify. During this time, it is recommended to stir occasionally to prevent the ingredients from clumping together. The next day, we will transfer the vegetables into jars, taking care to press them well to allow the juice to rise. The jars are sealed tightly and placed in the pantry, where they can be stored for a long time. This vegetable mix is extremely versatile and can be easily used in all soups and sweet broths, replacing salt or chemical products like Delikat or Vegeta. Whether you are preparing a vegetable soup or a delicious stew, a heaping teaspoon of this mix will transform the dish, giving it a special and authentic flavor.
