Fluffy Cake with Figs, Hazelnuts and Maraschino

To prepare a delicious fig cake, start by separating the egg yolks from the whites. In a large bowl, using a mixer, blend the yolks together with the sugar until you achieve a creamy composition of an intense yellow color. This is the perfect base for a fluffy and aromatic cake. Make sure the sugar is completely dissolved and the mixture becomes smooth and homogeneous. Continue mixing and add the soft butter, cut into cubes, mixing until fully incorporated. Flavors are essential, so don't forget to add the grated lemon zest, which will give a fresh and citrusy note to the cake. If you don't have Maraschino, as mentioned, replace it with a vial of maraschino flavor, also adding almost half a glass of milk to achieve a more liquid composition. Sifting the flour together with the baking powder is an essential step, as this will help the cake to be fluffier. Start gradually adding the sifted flour, mixing with a spatula until incorporated, being careful not to form lumps. Separately, in another bowl, beat the egg whites until they become firm and shiny. This step is crucial to give the cake an airy texture. Once you have beaten egg whites, slowly add them to the yolk mixture, using a spatula to gently incorporate them with upward and downward movements to avoid losing air from the egg whites. Wash the figs well and cut them into small pieces. If they are very ripe, do not peel them, as they will add a note of flavor to the cake. Add the figs to your batter and gently mix so that they are evenly dispersed. Finally, sprinkle crushed nuts on top, which will provide a contrasting crunchy texture. Prepare the cake pan, with a diameter of 24-26 cm, lining it with baking paper, then pour the batter into the pan, leveling it with a spatula. Bake the cake in the preheated oven at a temperature of 170-180 °C for about 40-45 minutes. It is important to check the cake with a toothpick; if it comes out clean, the cake is ready. After baking, let it cool in the pan for a few minutes, then transfer it to a platter. Enjoy it with your loved ones!
