In the middle of the flour, we will create a depression, a small crater where we will add the two eggs, a teaspoon of salt, 100 grams of lard, and warm water, making sure that it is not hot, but just lukewarm. It is essential to adjust the amount of water so that we obtain a perfect dough, which is neither too soft nor too hard. Once we have added all the ingredients, we will start kneading the dough patiently for about 15 minutes. This is the stage where the ingredients will blend harmoniously, forming an elastic and homogeneous dough. After we finish kneading, we will divide the dough into three equal pieces, which we will leave to rest for 15 minutes to relax. After this resting period, we will take the first piece of dough and, with the help of our palm, we will gently press it. On top, we will brush with a little melted lard, and then place the dough in the center of a clean tablecloth. We begin to stretch the dough with our hands, pulling from all sides to obtain a thin sheet, so that we can see the tablecloth through it. It is important to remember that the edges of the dough cannot be stretched as thin, so we will cut them to achieve a uniform appearance. After the sheet has been stretched, we leave it to dry for 15 minutes, after which we brush it again with warm melted lard and fold it into quarters. For the filling, we will use cheese, which we will mix with chopped dill, salt to taste, and two egg yolks. This delicious filling will add a special flavor to our roll. After we have prepared the filling, we place it over the folded dough and begin to roll it, making sure that the rolling is tight but not overly tight, to allow the dough to rise during baking. An effective way to do this is to lift the tablecloth from one side, thus helping the dough to roll itself. We repeat this procedure for the other two pieces of dough, using the same technique. These sheets can be filled with various ingredients, from fresh fruits to poppy seeds or nuts, depending on everyone's preferences. Once all the rolls are ready, we place them in a greased baking tray, brushing the top of each roll with melted lard. Now, we will put them in the oven, set to high heat, for 10 minutes. After this interval, we reduce the temperature and let the rolls bake until they become golden and nicely browned. After we take them out of the oven, it is important to cover them with a towel, then place a piece of foil or a plastic bag on top, followed again by a towel. This trick will help retain moisture and make the rolls fluffier. If we chose to fill the rolls with fruits or a sweet filling, do not hesitate to sprinkle them with powdered sugar for an elegant and delicious finishing touch. These rolls are ideal for a snack, a dessert, or to be served on special occasions, thus bringing a touch of joy and flavor to every meal.

  • 100 g lard (150 g margarine)
  • about 100 g lard for greasing the sheets. Filling: 1 kg sweet cow cheese
