Zucchini Meatball Soup

We start with the vegetables, which will add flavor. Wash the vegetables well, peel them carefully, and chop them finely, either with a knife or using a food processor to achieve a uniform consistency. Bring 3 liters of water to a boil in a large pot, adding salt to enhance the flavor of the vegetables. Once the water has started to boil, add the chopped vegetables and let them boil for about 15 minutes. Meanwhile, prepare the tomatoes, an excellent source of vitamins and antioxidants. Blanch them in boiling water so that you can easily peel them. After peeling, chop them finely. Boil them separately with a small amount of water, so that they turn into a delicious sauce that will complement the soup. Now let’s take care of the meatballs, which will add a surprise element and a wonderful texture. Take a fresh zucchini, peel it, and grate it using a large grater, being careful to remove the seeds. Salt it and let it sit in a strainer to drain excess water. In a bowl, combine the cheese with the eggs, salt, semolina, and dill, mixing well until you obtain a homogeneous mixture. After the zucchini has drained, squeeze it well with your hands to remove any excess juice and add it to the cheese mixture. Shape meatballs from the mixture, making sure to coat them in flour to achieve a slightly crispy crust on the outside. Once you have finished shaping all the meatballs, add them to the pot with the boiled vegetables. At the same time, add the rice, which will enrich the soup with a pleasant texture. Let everything boil until the meatballs are cooked and the rice is tender. When all the ingredients are cooked, add the borscht for a sour taste and season with salt to taste. Finally, don't forget to add a little fresh greenery, such as dill or parsley, to bring a touch of freshness. Mix well and serve the soup hot, enjoying its unmistakable aroma. This recipe will not only delight your taste buds, but will also bring a sense of well-being, being perfect for cool days.
