Fruit salad with cheese and gelatin

Fruit salad with cheese and gelatin - a fresh delicacy for spring Preparation time: 20 minutes Cooling time: 2 hours Number of servings: 6 Spring brings not only warm weather but also an explosion of flavors and colors in nature. This fruit salad with cheese and gelatin is perfect for celebrating the season, being a simple and quick recipe that will delight both adults and children. Fresh fruits, creamy cheese, and refreshing gelatin combine to create a vibrant and delicious dessert. Ingredients: - 300 g fresh strawberries - 200 g kiwi - 200 g peaches (fresh or canned) - 150 g cottage cheese or mascarpone - 100 g sugar (or honey, to taste) - 1 packet of gelatin (10 g) - 250 ml apple juice or natural orange juice - Mint leaves (for decoration) Step 1: Preparing the fruits Wash the strawberries well and cut them in half or quarters, depending on their size. Peel the kiwi and slice it thinly. If using canned peaches, drain them well to avoid excess liquid. If using fresh peaches, cut them into small cubes. These fruits are not only delicious but also rich in vitamins, making your salad a healthy dessert. Step 2: Preparing the gelatin In a small bowl, add gelatin and pour 100 ml of apple or orange juice. Let the gelatin hydrate for 5-10 minutes. Once it has swollen, place the gelatin in a bain-marie or microwave for a few seconds until completely dissolved. Then, mix the gelatin with the remaining juice. Step 3: Cheese mixture In another bowl, combine cottage cheese or mascarpone with sugar. Use a mixer to achieve a smooth and creamy mixture. If you want a sweeter note, you can add a little vanilla or citrus flavor. Step 4: Assembling the salad In a large bowl, place all the prepared fruits. Pour the dissolved gelatin over the fruits and gently mix to coat them evenly. Finally, add the cheese mixture and carefully blend, so as not to crush the fruits. This step will add a creamy texture and rich flavor to your salad. Step 5: Cooling Transfer the salad to a bowl or individual servings and refrigerate for about 2 hours, so the gelatin sets and the flavors combine perfectly. Serving suggestion: To impress your guests, serve the fruit salad with cheese and gelatin in glass cups, decorated with fresh mint leaves. It not only looks splendid but also adds a touch of freshness. Possible variations: To change the recipe a bit, you can replace strawberries with raspberries or blueberries, and mascarpone with Greek yogurt for a lighter version. Add nuts or toasted almonds for an extra crunch and flavor. This fruit salad with cheese and gelatin is not just a dessert but a true celebration of spring on a plate. Whether you serve it at a picnic, a family gathering, or as a healthy snack, it will surely be a hit. Enjoy!
Preparation
I divided the cheese into 2 bowls (I wanted 2 colors because I had 2 types of fruits) and added the drained fruits into the 2 bowls. In one, I put the berries + bananas, in the other the rest, and gently mixed them. I put on the stove 2 bowls, one with juice from a pineapple compote, the other with about the same amount of juice from a cherry compote. When they started to boil, I took them off the heat, poured orange gelatin into the pineapple and strawberry gelatin into the cherry juice, and mixed until the gelatin dissolved. After that, I added whipped cream to both bowls. I poured the pink salad into a pan with removable walls and put it in the freezer for just a few minutes until it hardened. I poured the orange salad on top, decorated it, covered it with plastic wrap, and put it in the fridge overnight. Enjoy your meal!
