Sweet cabbage soup with smoked bacon

While it boils, we take care of the vegetables. The cabbage is sliced thinly, and the carrots can be cut into rounds or quarters, depending on personal preference. The onion is left whole so that we can remove it later from the soup, to avoid influencing the final texture. Once the kaizer has boiled, we add the carrots and a sprig of thyme, letting everything boil until the carrots become slightly soft. Then, it is time to add the sliced cabbage, allowing the soup to continue boiling so that the flavors combine harmoniously. After the cabbage is cooked, we move on to seasoning the soup. In a pan, we heat the oil and add the flour, stirring constantly. We let it sizzle, a sign that the flour starts to cook and reveal its aroma. Then, we add the broth, continuing to stir to avoid lumps. Once we have a smooth paste, we take some of the hot soup liquid with a ladle and pour it over this roux, stirring vigorously to achieve a fluid consistency. We then add this mixture to the pot with cabbage, homogenizing everything. It is important to taste the soup and adjust the salt to preference, being careful not to make it too salty, as the kaizer already adds some salt. Meanwhile, in another bowl, we put the sour cream and, using the same hot liquid, we add a little at a time, stirring carefully to temper the sour cream. This is an essential step, as we ensure that the sour cream does not curdle when added to the soup. After obtaining a liquid and homogeneous composition, we pour everything into the pot with cabbage and kaizer, letting the soup come to a final boil. Now, the rich aroma and creamy texture of the soup are ready to be savored. Serve the soup hot, perhaps with a slice of fresh bread on the side, and enjoy a comforting meal full of authentic flavors.
