Waffles for dessert

For waffles, I let the thick batter fall into the center of the plate and check the browning after a minute. The eggs, milk, flour and butter are mixed into a batter like thick sour cream, then the appliance browns each portion. I like them plain, with a cup of warm milk alongside, at the table. Ingredients
- 2 eggs
- 80 g sugar
- 325 ml milk
- 400 g flour
- 1 packet baking powder
- 1/8 teaspoon salt
- 100 g butter
- 1 vial vanilla essence
- 5 ml oil
Preparation
1. Beat the eggs with the sugar in a bowl, then add the milk and mix. 2. Mix the flour with the baking powder and salt. Gradually stir them into the bowl until the batter is smooth. 3. Pour in the melted and cooled butter, then add the vanilla essence. The batter should run slowly off the whisk, like thick sour cream. 4. Heat the appliance for 3 minutes, until the plates are hot, then grease them with oil. 5. Put a ladleful of batter in the center of the plate without spreading it, and close the lid. Check after 1 minute and, if it hasn't browned, leave it for up to 2 minutes; repeat until you've used all the batter, making 9 waffles.
Notes
I recently got the appliance I'd wanted for a long time and tried it with a batter based on Laura Adamache's version. You can replace 100 g of the white flour with 100 g whole wheat flour; they come out denser. The basic version contains gluten, dairy and eggs. For a dairy-free version, replace the milk with 325 ml unsweetened soy drink and the butter with 80 g neutral oil. Thick plates brown more slowly than thin ones, so keep an eye on the color as they approach the two-minute limit. If the batter sits while the batches cook, give it a quick stir before taking the next portion. Grease again only when the surface starts to stick. If you increase the amount, mix all the batter at once and cook it in batches; put jam or honey on the table when serving. Once completely cooled, the waffles keep in a closed container in the fridge for up to 3 days; reheat them in the appliance before serving.
