Oven-Baked Potatoes with Fennel

To prepare a culinary delight, we start by cleaning, washing, and removing the core from a bulb of fennel, which we will slice very thinly. This vegetable has an anise flavor that will add a special note to our dish. Next, we clean and wash an onion, which we finely chop, thus preparing for the next step. In a pan, we put a combination of olive oil and butter, which we heat over medium heat. When the oil and butter are well heated, we add the chopped onion and fennel slices, stirring occasionally to brown them evenly. We let these vegetables fry for about 10-15 minutes until they take on a light brown color, thus releasing their savory aromas. Meanwhile, we take care of the potatoes. We clean and wash the potatoes, then slice them very, very thinly. If we have a mandoline, it is the ideal tool to obtain thin and even slices. After we finish slicing, we put the potatoes in a large bowl and mix them with salt, pepper, heavy cream, and our favorite cheese. I chose mozzarella and parmesan for a creamy texture and rich flavor. Once all the ingredients are well combined, we add the mixture of fried onion and fennel to the bowl with the potatoes, ensuring that each slice is coated with the delicious flavors. We transfer the mixture to a baking dish, leveling the composition well and gently pressing down with a spoon to ensure everything settles evenly. From the remaining milk and cheese, we prepare another mixture that we will pour over the potatoes, thus ensuring a delicious crust at the end. If the potato slices are not very thin, we can add a few extra tablespoons of milk to ensure they cook well. We place the dish in the preheated oven and let it bake for about an hour, but it is good to check from time to time. If we notice that the dish is browning too much, we can cover the dish with a lid or aluminum foil, continuing to bake until the potatoes become soft and the flavors blend perfectly. This recipe can be enjoyed as a standalone dish or served alongside a juicy steak and sauerkraut, turning the meal into an unforgettable culinary experience.
