Omelette with Arugula and Toasted Bread with Arugula and Mozzarella

The first time I prepared a delicious omelette, which would serve as the base for a savory breakfast. I started by putting a generous piece of butter in a non-stick pan, letting it melt slowly, releasing wonderful aromas. Meanwhile, I whisked two fresh eggs with a whisk, adding a pinch of salt to enhance the flavor. After the eggs were well mixed, I added some pieces of creamy cheese, which I cut into cubes, and about ten sprigs of arugula, which I chopped finely. These ingredients were carefully incorporated into the egg mixture to create an omelette rich in flavors and textures. Once the mixture was homogeneous, I poured it into the pan with the melted butter and let it fry over medium heat. For a few minutes, I watched as the edges of the omelette began to rise beautifully, and the color turned golden. With the help of a spatula, I flipped the omelette to the other side, being careful not to break it, and let it fry on that side as well. After a few moments, I took the omelette out of the pan and let it cool on a plate. In the meantime, I started preparing the bread. I took two slices of round bread, which were a bit thicker, and cut each slice in half. I put them in the toaster to achieve a crispy texture. After they were toasted, I drizzled the slices with olive oil, giving them a Mediterranean touch. I also chopped the remaining arugula finely and set it aside to use as a garnish. Next, I sliced a fresh tomato into thin slices, which I carefully arranged on each slice of bread. On top of the tomatoes, I added olive oil, a sprinkle of salt, dried basil, and half of the previously chopped arugula. Then, I placed uniformly sliced mozzarella on top of the tomatoes, creating a delicious contrast. Over the mozzarella, I sprinkled dried basil again and the remaining arugula for an extra touch of freshness. In the end, I served this wonderful combination alongside fragrant coffee and a natural juice, enjoying every bite. This omelette on toasted bread quickly became my favorite for a perfect breakfast.
