Zucchini and potato fritters

Zucchini and potato fritters are fried in a pan and served warm or cold. Grated zucchini and potato are bound with telemea cheese and dill, and the fritters get browned edges. I prefer them cold, with nothing on the side. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total time: 54 minutes. Serves: 4. About 470 kcal and 20 g protein per serving.
Ingredients
- 2 zucchini (800 g)
- 1 teaspoon salt
- 4 potatoes (600 g)
- 1 medium red onion (150 g)
- 200 g telemea cheese
- 3 eggs
- 15 g dill
- 1/2 teaspoon ground pepper
- 3 tablespoons flour
- 250 ml oil for frying
Preparation
1. Peel the zucchini, cut them lengthwise and scoop out the seeds with a teaspoon if they’re large. Grate them on the coarse side of a grater, mix with 1/2 teaspoon salt and leave to drain in a colander for 10 minutes. 2. Peel and wash the potatoes, then grate them on the fine side of a grater. Peel the onion and grate it on the fine side too. Grate the telemea on the coarse side and finely chop the dill. 3. Squeeze the zucchini and potatoes well and put them in a bowl. Add the onion and telemea, then mix. 4. Mix in the eggs and dill. Add 1/2 teaspoon salt and 1/2 teaspoon pepper, then the flour, and mix well. 5. Heat 250 ml oil in a frying pan. Spoon in the mixture and fry the fritters in batches, about 2 minutes on each side, 24 minutes in total, until browned. Transfer them to paper towels.
Notes
Floury potatoes bind the mixture better, while new potatoes can release more water. Saltier telemea will change the taste, so start with less salt than you usually would. If you want them denser, add a little more flour; boiled and grated potatoes make a more substantial version. Serve with a tomato salad. Keep in the fridge for up to 3 days; telemea and eggs are allergens, and flour contains gluten.
Frequently asked questions
Can I replace the telemea with feta?
Yes, use 200 g feta. Taste it before adjusting the salt, as it may be just as salty.
What should I do if the mixture is still too soft?
Mix in 1 more tablespoon of flour and leave the mixture for 2 minutes before putting it in the pan.
How do I keep the potatoes from being raw in the middle?
Flatten each portion to about 1 cm thick and fry for about 2 minutes on each side over medium heat.
Can I grate the potatoes ahead of time?
Yes, you can keep them in cold water for up to 30 minutes. Drain and dry them well before mixing them with the zucchini.
