Banana and Dried Fruit Cake

It is essential to ensure that the baking pan is properly prepared; we recommend using a non-stick pan, which will prevent the cake from sticking, or we can line it with parchment paper to facilitate removing the cake after baking. In a large bowl, we combine well-ripened bananas, beaten eggs, melted butter, yogurt, and sugar. We use a mixer or a spatula to mix the ingredients until we achieve a homogeneous mixture. It is important that the bananas are very well mashed, so they integrate perfectly into the batter, providing a moist texture and a sweet flavor. Separately, in another bowl, we mix the flour with the baking powder. This combination will ensure an even rise of the cake. Once the dry ingredients are homogenized, we add them to the wet banana mixture. Using a spatula, we gently mix to avoid the formation of lumps. Finally, we incorporate three-quarters of the ground nuts and 75 grams of finely chopped chocolate, thus adding extra texture and flavor to the cake. We pour the resulting mixture into the prepared pan, ensuring it is evenly distributed. On top, we sprinkle the remaining nuts or almonds, finely chopped dried fruits, which will add a touch of sweetness and an attractive appearance, and the remaining chocolate. We place the pan in the oven and bake for about 45 minutes. It is important to monitor the cake, as the baking time may vary depending on the oven. The cake is ready when it turns golden and rises beautifully. After removing the pan from the oven, we let the cake cool in the pan, so the flavors meld and stabilize. Once cooled, we can carefully remove the cake from the pan. Although its texture is not very fluffy due to the bananas and candied fruits, the taste is absolutely delicious and aromatic. This cake is perfect for a savory dessert or a snack alongside a cup of tea or coffee. Serve with confidence and enjoy every slice!
