To prepare a culinary delight that will delight everyone's taste buds, start by making a perfect pancake batter. In a large bowl, combine about 150 grams of flour with a pinch of salt. Gradually add fresh milk, along with two beaten eggs, continuously mixing to achieve a smooth composition. It is essential that the batter is fluid, but not too runny, having a consistency similar to that of sour cream, so that the pancakes are neither too thick nor too thin. Let the batter rest for about 30 minutes to allow the ingredients to blend harmoniously. While the batter is resting, prepare the flavorful tomato sauce. In a small saucepan, add a crushed clove of garlic, along with two tablespoons of olive oil. Sautéing the garlic will add an intense flavor note to the sauce. After a few minutes, add the tomato sauce, either from a can or made from fresh crushed tomatoes. Season with fresh or dried basil and, if necessary, a little salt. Let the sauce simmer over medium heat for about 10 minutes, to thicken and combine the flavors, then remove the garlic. Now it’s time to fry the pancakes! Heat a non-stick frying pan with a diameter of 18-20 cm, greased with a little oil. Pour a ladle of batter into the pan and tilt it to evenly distribute the batter. Fry the pancakes on each side until golden, then repeat the process until you finish all the batter, yielding about 12 pancakes. For assembling the dish, take a round baking dish and add a thin layer of tomato sauce at the bottom. Place the first pancake, add more tomato sauce, and sprinkle diced mozzarella, followed by grated Parmesan or any other cheese that melts well. Repeat this process, forming alternating layers of pancakes and sauce, until all ingredients are used. Once you have completed the layers, place the dish in the preheated oven at 200 degrees Celsius. Bake for about 25 minutes, or until the mozzarella is completely melted and the top is golden and appetizing. Once you take the dish out of the oven, let it cool for a few minutes before slicing.
