Preparation time: 20 minutes Marinating time: 4 hours (or overnight) Baking time: 1 hour Total: 1 hour and 20 minutes Servings: 4 Ingredients needed For the ribs: - approx. 1 kg pork ribs For the marinade: - 200 ml beer (choose a flavorful beer, preferably a lager or pale ale) - 5 tablespoons olive oil - 1 red onion, finely chopped - 4 cloves of garlic, very finely chopped - 1 teaspoon sea salt - a pinch of ground pepper - 1/2 teaspoon peppercorns - 1 teaspoon coriander seeds - 1 tablespoon soy sauce - 1 teaspoon ginger powder - a few sprigs of fresh or dried thyme For the sweet-spicy sauce: - 1 tablespoon oil - 1 tablespoon medium spicy chili sauce (you can adjust the heat level to your preference) - 1 heaping tablespoon acacia honey - 2 teaspoons sesame seeds Step-by-step instructions 1. Prepare the marinade: In a large bowl, mix all the marinade ingredients: beer, olive oil, onion, garlic, salt, pepper, peppercorns and coriander, soy sauce, ginger powder, and thyme. Make sure all ingredients are well combined. 2. Marinate the ribs: Place the pork ribs in a roasting bag and pour the marinade mixture over them. Seal the bag tightly, ensuring the marinade evenly covers the meat. Place the bag in a tray to catch any leaks and refrigerate for 3-4 hours or ideally overnight. Marinating enhances the flavor and tenderizes the meat. 3. Prepare for baking: Preheat the oven to 190 degrees Celsius. Remove the tray from the fridge and, using a fork or a sharp object, poke the bag in several places to allow steam to escape. 4.
