Iahnie de fasole with roasted pepper salad

Iahnie de fasole, a Romanian bean stew, with roasted pepper salad, has tender beans in tomato sauce and tangy kapia peppers on the side. The onion and carrot give the sauce a soft texture, and the parsley freshens it up; I choose small beans so they’re roughly the same size. Preparation: 20 minutes. Cooking: 156 minutes. Resting: 10 minutes. Total time: 186 minutes. Servings: 4. Approximately 496 kcal and 20 g protein per serving.
Ingredients
For the bean stew
- 300 g dried beans
- 2000 ml water
- 2000 ml hot water
- 500 ml reserved cooking water
- 2 tablespoons oil
- 2 medium yellow onions (300 g)
- 1 large carrot (120 g)
- 1 medium red bell pepper (150 g)
- 3 tablespoons tomato juice
- 1 teaspoon salt
- 15 g fresh parsley
For the roasted pepper salad
- 1 kg red kapia peppers
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
Preparation
1. Rinse the beans in cold water. Put them in a pot with 2000 ml water and boil for 10 minutes, until the water comes to a boil; drain. 2. Pour 2000 ml hot water over the beans and simmer for 90 minutes, until the beans are tender. Set aside 500 ml of the cooking water, then drain the rest. 3. Arrange the kapia peppers on a baking tray and roast at 230°C for 25 minutes, turning them halfway through, until the skins are blackened in places. Cover them for 10 minutes, then peel and remove the stems and seeds. 4. Put the peppers in a bowl and season with 1/2 teaspoon salt, 2 tablespoons olive oil and 1 tablespoon balsamic vinegar. 5. Finely chop the onion, carrot and bell pepper. Heat 2 tablespoons oil in a pot and sauté the vegetables for 8 minutes, until translucent. 6. Add 3 tablespoons tomato juice and cook for another 3 minutes. Add the cooked beans, 500 ml reserved cooking water and 1 teaspoon salt. Simmer for 20 minutes, until the sauce has reduced as much as you like. 7. Turn off the heat and sprinkle with chopped parsley. Serve the bean stew with the roasted pepper salad.
Notes
Small beans cook faster than large ones; if they’re older, they may still be firm after the cooking time, so leave them to cook until tender. For the salad, choose meaty kapia peppers with smooth skins. If they release a lot of juice after peeling, drain it before seasoning them. The stew is reminiscent of a bean casserole, but the roasted peppers are served separately alongside it. Store the beans and salad separately in sealed containers in the fridge for up to 3 days. I serve it with homemade bread, just right for mopping up the sauce on the plate.
Frequently asked questions
Why are the beans still firm after cooking?
Older beans may need another 15-20 minutes. Check that they crush easily before adding them to the sauce.
Can I use canned beans?
Yes. Use 700 g drained beans and leave them in the sauce for 15 minutes, just long enough for the flavors to come together.
What should I do if the stew is too runny?
Let it simmer uncovered for another 10 minutes, stirring from time to time, until the sauce thickens.
