To prepare a delicious recipe for candied orange peels, the beginning is essential. First, choose fresh oranges, preferably organic, to avoid chemicals on the peel. Wash the orange peel well under a stream of cold water, making sure to remove any impurities. After washing the orange, dry it with an absorbent towel so that it is ready for cutting. Then, with a sharp knife, slice the peel into thin strips, being careful not to penetrate the fruit's flesh. It is important to remove the white part from inside the peel, as it can give a bitter taste to the final preparation. After peeling, cut them into strips and, if desired, you can also turn them into small cubes for a more elegant presentation. Next, place the orange peel slices in a pan and cover them with cold water. Put the pan on medium-high heat and bring the water to a boil. Let the peels boil for a few minutes, then strain them to remove the water. This process will be repeated two more times, to reduce the bitterness of the peel and prepare it for candying. Once you have completed this process, in another pan, add 100 ml of water and 85 g of sugar. Stir with a wooden spoon until the sugar completely dissolves and the mixture reaches boiling point. Let this syrup boil for 6-7 minutes until it becomes slightly sticky. Once the syrup is ready, add the previously prepared orange peels. Carefully stir using the same wooden spoon until the peels become translucent, indicating that they have absorbed the sweet syrup. After finishing this step, strain the mixture to remove excess syrup. Let the orange peels cool at room temperature for about 4 hours. This time will allow the flavors to develop and intensify. After this period, the candied orange peels can be used to decorate cakes, pastries, or can be consumed as is as a delicious snack. You can also store them in an airtight container, where they will remain fresh and aromatic. This recipe not only brings a wonderful taste but also adds a splash of color to your dishes!
