Cauliflower Salad with Red Onion

Cauliflower is a versatile vegetable, full of nutrients, that can be prepared in numerous ways. In this recipe, we aim to transform boiled cauliflower into a delicious and healthy dish, perfect as a side or as a refreshing appetizer. The first step is to prepare the cauliflower. We will wash it well under a stream of cold water to remove any impurities. Then, we place it in a pot of boiling water, adding a little salt to enhance the flavor. We boil the cauliflower for about 10-15 minutes, until it becomes soft but not overcooked, so it retains its crunchy texture. After boiling, we drain it well and let it cool. Once cooled, we cut the cauliflower into small florets, which will be easy to mix with the other ingredients. Now we turn our attention to the aromatic vegetables. We slice the onion into thin strips, using a julienne cutting technique, to achieve uniform pieces that will harmoniously blend into the salad. The garlic, with its intense aroma, will be sliced into thin rounds, allowing it to release its flavor into the mix. Fresh parsley, finely chopped, will add a note of freshness to the dish. All these ingredients are mixed well in a large bowl to combine the flavors. When the cauliflower has completely cooled, we add it to the bowl with the vegetables. Next, we add the finely chopped dill, which will provide a distinct and fresh taste to the salad. We carefully mix everything, ensuring that the cauliflower florets are well integrated into the vegetable mixture. Seasoning is essential to highlight all the flavors. We add salt and seasoning mix, adjusting the quantities to personal taste. These spices will enhance the flavor of the vegetables and transform the dish into a true feast. Olive oil, added gradually, will bind the ingredients and provide extra creaminess. Finally, we add vinegar, which will offer a pleasant contrast between the sweet and salty flavors. It is important to taste the mixture and adjust the acidity of the vinegar to preference. This cauliflower salad can be served immediately, but it is recommended to let it sit in the fridge for an hour, allowing the flavors to develop and blend perfectly.
