First, you will need 1 kg of chicken (thighs or breast, depending on your preference), 1 kg of potatoes, 4 cloves of garlic, a bunch of fresh rosemary, salt and pepper to taste, and optionally, a tablespoon of olive oil for extra flavor. Make sure you also have a glass baking dish to bake the dish in the oven. The first step is to peel the potatoes. Wash them well under running water, then cut them into larger cubes, so they don’t turn into mash during baking. Set the cut potatoes aside. Next, wash the chicken well and, if you want, remove the skin. This is a personal choice, as the skin provides a crispy texture but can also contain more fat. Place the chicken in the glass dish, making sure to distribute it evenly. Now it’s time to arrange the potatoes around the chicken, so they can absorb its flavors during baking. Sprinkle salt, pepper, finely chopped garlic, and finely chopped rosemary on top. This combination will give the dish a special aroma. It’s important to adjust the amount of spices to your personal taste, but don’t overdo it, so you don’t overpower the natural flavor of the ingredients. After seasoning everything, add a glass of water or half, depending on the size of the dish. The water should cover only a quarter of the potato layer, considering that the chicken will also release juice during cooking. This will help create a delicious sauce that will enhance the dish's flavor. If you notice that the water evaporates too quickly, feel free to add a little extra water during baking to maintain moisture. Cover the dish with aluminum foil and place it in the preheated oven at 180 degrees Celsius. Let the dish bake for about 40 minutes. After this interval, check the chicken with a fork; if it is cooked and the juice is clear, remove the foil. Leave it in the oven to brown the meat, turning it occasionally, so it becomes crispy on both sides. The potatoes will develop a golden crust, which will add a pleasant contrast of textures to the plate. Finally, serve the dish warm, alongside a side of roasted peppers, which add not only a splash of color but also a sweet and sour taste, perfect for complementing the meal.
