Fried Brie with Tomato Sauce and Green Sauce

To prepare a special culinary delight, we will start by taking care of the tomato sauce, which will add a rich flavor and a fresh note to our dish. The first step is to blanch the tomatoes: we dip them in a pot of boiling water for about 30 seconds, then take them out and let them cool slightly. The skin will come off very easily, and this will allow the sauce to be smoother. After removing the skin, we cut the tomatoes into large pieces and add them to a pot. Here, we add chopped fresh basil, a splash of extra virgin olive oil, salt, and for a sweet touch, a few tablespoons of honey. If you want to give the sauce a spicy note, now is the time to add finely chopped hot pepper. We mix the ingredients and let the sauce simmer on low heat, making sure to stir occasionally. The goal is to evaporate the liquid released by the tomatoes until the sauce becomes more concentrated and flavorful. In parallel, we take care of the parsley sauce. We wash the fresh parsley well under a stream of cold water, then carefully dry it. We put it in a blender, add olive oil, and blend until we get a smooth paste. This will bring a color contrast and a fresh flavor to the dish, being a perfect accompaniment. Now we take care of the Brie cheese. We cut it into suitable pieces, which we will pass through flour, beaten egg, and finally breadcrumbs. This outer layer will provide a crispy texture when the cheese is fried. In a smaller but tall pot, we add oil and heat it well, ensuring that it will be enough to cover the cheese when we introduce it into the oil. Once the oil is hot, we put the pieces of cheese in the pot and fry them for about 2 minutes, until they become golden and crispy, then we carefully turn them over to the other side. This will allow the cheese to melt slightly inside, resulting in a perfect combination of textures. In the end, we serve the fried cheese alongside the tomato sauce and the parsley sauce. This dish will be not only a feast for the taste buds but also a feast for the eyes, thanks to the vibrant colors and enticing aromas. Bon appétit!
