Chicken wing and pepper stew

Chicken wing and pepper stew starts with browned wings, then simmers covered with strips of red pepper and finishes with tomato passata. The sauce stays soft and well combined, while the peppers hold their shape, with pieces of vegetables among the tender wings. I choose wings that are roughly the same size so they all become tender at about the same time. Preparation: 15 minutes. Cooking: 50 minutes. Total time: 65 minutes. Serves: 3. About 490 kcal and 29 g of protein per serving.
Ingredients
- 6 chicken wings
- 3 tablespoons olive oil
- 1 medium onion (150 g)
- 1 medium carrot (100 g)
- 250 ml water
- 3 red bell peppers (450 g)
- 2 garlic cloves (optional)
- 250 ml water
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 30 g tomato passata
Preparation
1. Finely chop the onion, peel the carrot and slice it. Remove the stems and seeds from the peppers, then cut them into strips. Pat the wings dry with paper towels. 2. Heat 3 tablespoons of olive oil in a frying pan. Cook the onion and carrot for 5 minutes, until softened and the onion is translucent. 3. Add the wings and brown them for 5 minutes, turning them on all sides. 4. Pour in 250 ml of water, cover the pan and simmer over medium heat for 20 minutes. Then transfer the wings and vegetables, along with the liquid, to a saucepan. 5. Add the pepper strips, the chopped garlic if using, another 250 ml of water, 1 teaspoon of salt and 1/2 teaspoon of pepper. Cover and simmer for 10 minutes, until the peppers soften. 6. Add the tomato passata, cover the saucepan and simmer for another 10 minutes over low heat, until the meat is tender.
Notes
Wings that are roughly the same size cook more evenly; larger ones may need a little more time for the meat to come away from the bone. If the sauce seems too thin, mash a few strips of pepper in the saucepan and stir them back in. It has something of an everyday chicken stew about it, but here the peppers stay in pieces and show up on the plate. Serve it with polenta or bread and keep leftovers in the fridge for up to 3 days. You can replace the red peppers with 450 g of yellow peppers.
Frequently asked questions
Can I use frozen peppers?
Yes, add 450 g of frozen peppers straight to the saucepan and simmer for 12 minutes before adding the tomato passata.
Why are the wings still tough?
Leave them covered over low heat for another 10 minutes, until the meat comes easily away from the bone.
What can I use instead of tomato passata?
Mix 30 g of tomato paste with 30 ml of water and add it instead of the passata; then simmer everything for 10 minutes.
