Oven-baked sausages with potatoes (and a little tomato salad, if you feel like it) I usually make this recipe when I have potatoes and a few homemade sausages in the fridge. I don't have to stand by the oven for too long, and the ingredients are handy. I rarely complicate things; I just put everything in the tray, and while the oven does its job, I can quickly prepare a salad. From time to time, I also add some frozen chicken pieces if I have small leftovers in the freezer. Wash the potatoes well, then peel them. 2. Cut the potatoes lengthwise into fairly thick slices, about twice as wide as those for frying. They don't have to be uniform to the millimeter. 3. Place the slices in a large bowl. Add salt, pepper, chili, vegeta, and dried oregano. Mix well to coat all the pieces. 4. Prepare a large tray lined with baking paper. 5. Spread the seasoned potatoes evenly across the tray, without overcrowding them. 6. Make a lengthwise cut in the sausage without cutting it all the way through, and place it on top of the potatoes. 7. If you have pieces of chicken schnitzel (I sometimes use two small frozen pieces), place them among the potatoes; they don't need to be thawed beforehand. 8. Pour half a cup of water, distributing it as evenly as possible on the bottom of the tray. 9. The oven should be preheated to 200 degrees. Place the tray on a medium level. 10. Bake for 40 to 50 minutes. From time to time (about after 25-30 minutes), you can check and possibly turn the sausage to the other side. 11. When the potatoes are browned at the edges and the sausage looks good, you can take the tray out. 12. Optionally, in the meantime, you can also make a simple salad of tomatoes and cucumbers. Why I make this recipe often It uses ingredients that I almost always have at home. It doesn't require constant attention; I can put everything in the tray and attend to other things. The potatoes and sausage, together with some chicken, are filling enough without needing complicated side dishes. Tips and variations Tips Don’t cut the potatoes too thin; otherwise, they will crumble while baking. If you use frozen chicken, there’s no need to thaw it beforehand, just avoid very large pieces. Check the tray at the end. If you see that all the water has evaporated and the potatoes haven’t browned yet, you can add two or three tablespoons of warm water. Substitutes The sausage can be store-bought, but a homemade smoked sausage will add more flavor. Instead of white potatoes, you can use red or yellow potatoes, but the texture will be slightly different. You can skip the chicken pieces if you don’t have any or if you want a simpler version.
