However, drying alone is not enough; to ensure that the mushrooms are safe, they must undergo an additional process. An effective method is to keep them in the freezer for 12 hours. This helps eliminate any insect eggs or worms that may be present, thus ensuring a supply of clean and healthy mushrooms. After being frozen, mushrooms should be carefully packaged. Paper bags can be used, which should be sealed tightly, and placed in a warm spot for two days, such as a kitchen cupboard. This step is essential to allow the mushrooms to breathe and retain their aroma. Subsequently, it is recommended to add some anti-moth spices, such as peppercorns, bay leaves, or even mustard seeds. These not only protect the mushrooms but also enrich their aroma. For those with a vacuum sealer, this method is ideal, and adding a peppercorn between mushrooms, especially with chanterelles or morels, will enhance the flavor and prevent spoilage. Proper packaging and storing mushrooms in optimal conditions are essential steps to enjoy the intense aroma and unmistakable taste of mushrooms in any dish, whether it is soups, sauces, or cooked meals. Thus, dried mushrooms become not just an ingredient, but a true treasure in our kitchen.
