Preparing the noodles If you don't have pre-made noodles, start with them. For egg noodles, beat the 3 eggs with a pinch of salt and gradually add flour until you get a firm but elastic dough. Roll out the dough as thin as possible on a floured surface. Let the dough sheet dry a little in the air (10-15 minutes is enough). Roll the sheet and cut it into thin strips, then spread the noodles on the surface and sprinkle a little flour over them to prevent sticking.
