Eggplant Moussaka with Millet and Tarragon

Millet is a versatile and nutritious ingredient, perfect for adding a healthy twist to your dishes. We start by washing the millet in several waters to ensure that we remove any impurities. This step is essential as it helps us achieve a clean and pleasant taste. After washing, we boil the millet in salted water, letting it cook for about 20 minutes. It is important to check the consistency from time to time; the millet should be soft but not sticky. In the meantime, we take care of the eggplants. We wash the eggplants, peel them, and cut them into long, thin strips. These strips will gain a special flavor on the grill, where we will leave them for 2-3 minutes until they become slightly browned and acquire a pleasant texture. The aroma of the charcoal will add a special note to our dish. We also slice the onion into rings and grill it until it becomes golden and caramelized. Next, we prepare a glass dish, ideal for observing the delicious layers of our dish. We add a tablespoon of olive oil, and then carefully arrange the slices of eggplant at the bottom of the dish. These will form the delicious base of our moussaka. Over the eggplant, we add halved cherry tomatoes, which will bring a note of freshness and a color contrast. Then, we add the boiled millet, grated cheddar cheese, tarragon, parsley leaves, and celery, as well as finely chopped fresh rosemary leaves, which will intensify the flavors. To close the moussaka, we place a new layer of eggplant slices on top and add grated cheddar cheese and tarragon again. This final layer will create a delicious crust when the dish is baked. We preheat the oven to 200 degrees Celsius and place the dish inside for about 15 minutes. When the moussaka is ready, the cheese will be melted and slightly browned, and the flavors will intertwine in a perfect dance of tastes. Serve this delicacy warm, alongside a fresh green salad.
