Soups - Ciorbă de șalău, Romanian pike-perch soup by Carla K. - Recipia

Ciorbă de șalău, a Romanian pike-perch soup with vegetables, is served hot for lunch, with tender fish steaks and the vegetables still whole. The beetroot colors the broth, while the broccoli, green beans, zucchini and tomatoes make it a vegetable soup with fish. For pike-perch, I prefer thick steaks that lift easily out of the pot in one piece. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total time: 54 minutes. Serves: 4. Approximately 310 kcal and 29 g protein per serving.

Ingredients

  • 3 l water
  • 1 teaspoon salt
  • 2 medium carrots (140 g)
  • 2 small beetroot (200 g)
  • 1 medium parsley root (100 g)
  • 150 g trimmed green beans
  • 1 small broccoli (200 g)
  • 4 medium zucchini (800 g)
  • 2 medium tomatoes (250 g)
  • 1 medium red bell pepper (150 g)
  • 1 bunch green onions (100 g)
  • 4 pike-perch steaks (600 g)
  • 1 chili pepper
  • 200 ml tomato purée
  • 15 g parsley
  • 1 zucchini blossom

Preparation

1. Wash and clean the vegetables. Cut the carrots, beetroot and parsley root into cubes, trim the green beans and get the other vegetables ready to cut. 2. Put the water, carrot, beetroot and parsley root cubes, green beans and salt in a pot. Bring to a boil, then simmer for 15 minutes, until the vegetables are almost tender. 3. Break the broccoli into florets, slice the zucchini, dice the tomatoes and bell pepper, then chop the green onions. Add them to the pot along with the pike-perch steaks and cook for 7 minutes; the vegetables should stay whole, and the fish should just begin to flake easily. 4. Slice the chili and add it along with the tomato purée, parsley and zucchini blossom. Cook for 2 more minutes, just until the blossom softens and the tomato purée is heated through. 5. Turn off the heat and leave the soup covered for 10 minutes before serving.

Notes

Keep the soup covered in the refrigerator for up to 3 days; heat only as much as you plan to eat and bring it to a gentle boil. If you don’t have green beans, replace the 150 g with the same amount of peas. I usually made fish soup from heads and tails; this time I had fish steaks on hand and put them in the pot without a second thought. I also added the zucchini blossom, which can stay whole in the broth until serving. Choose steaks that are about the same thickness, since thinner ones cook before thicker ones; for very thick steaks, cook for 2 minutes longer. If the beetroot is firm, cut the cubes smaller than the carrot cubes. It’s like an ordinary vegetable soup, only the fish steaks are served whole; put some bread alongside.

Frequently asked questions

Can I use pike-perch fillet instead of steaks?

Yes. Cut 600 g of fillet into 4 cm pieces and cook for 7 minutes so it doesn’t flake too much.

Can I use potatoes instead of zucchini?

Yes, use 300 g of potatoes cut into 2 cm cubes and add them to the pot with the root vegetables.

Why does the fish fall apart in the soup?

Thin steaks break apart more quickly, especially if the broth is boiling hard. Choose pieces at least 3 cm thick and keep the heat low.

Can I replace the broccoli with cauliflower?

Yes, add 200 g of cauliflower broken into 3 cm florets at the same time as the zucchini.
