Borș de perișoare is a tangy Romanian soup with small beef and pork meatballs, vegetables and borș added towards the end. This 5-liter pot makes over 60 meatballs, and the herbs go into the broth before it rests under the lid for 15 minutes. I go for a mix with more beef and make the meatballs about the size of a hazelnut. Prep: 45 minutes. Cook: 51 minutes. Rest: 15 minutes. Total time: 111 minutes. Serves: 8. Approximately 230 kcal and 12 g protein per serving.

Ingredients

For the soup

  • 2 medium carrots (200 g)
  • 2 parsley roots (160 g)
  • 1 small celeriac (200 g)
  • 2 tomatoes (250 g)
  • 5 green onions (100 g)
  • 30 ml oil
  • 3 l water
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 l borș
  • 15 g parsley
  • 15 g dill

For the meatballs

  • 250 g ground beef
  • 125 g ground pork
  • 1 egg
  • 4 tablespoons rice
  • 8 g white flour
  • 100 g white flour for shaping
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 15 g parsley

Preparation

1. Peel, wash and finely chop the carrots, parsley roots and celeriac, about 15 minutes. Put them on to boil in 3 liters of water and simmer gently for 20 minutes, until softened. 2. Slice the green onions into rounds, setting the bulbs aside for the meatballs. Chop the washed, seeded tomatoes. Heat 30 ml of oil and cook the green onion tops for 5 minutes, then add the tomatoes and cook for another 3 minutes, until softened. 3. Rinse the rice and leave it to drain. Pat the meat dry with paper towels, then mix it with the egg, rice, finely chopped green onion bulbs, 15 g chopped parsley, 8 g flour, 1 teaspoon salt and 1/2 teaspoon pepper. Mix until combined. 4. Turn off the heat under the vegetables while you shape the meatballs. Allow about 25 minutes for shaping. Make small balls, roll them in the flour for shaping and place them in the broth, which should no longer be boiling. 5. Turn the heat back on and bring the soup to a boil. Add the onion and tomatoes with the oil from the pan, then 1 teaspoon salt and 1/2 teaspoon pepper. Cook for 20 minutes, until the meatballs are cooked through. 6. Pour in 750 ml borș, then add up to 250 ml more, depending on how sour it is. Once the soup comes to a boil, let it cook for 3 minutes. Add 15 g parsley and the chopped dill, then turn off the heat. Cover the pot and leave it for 15 minutes without lifting the lid.

Notes

For the meatballs, use more beef than pork, and make sure the meat is lean and freshly ground; too much pork can make them fall apart. Homemade borș can be much sourer than store-bought, so start with 750 ml and taste before pouring in the rest. Meatballs larger than 2 cm need about 5 minutes more to cook; check one before turning off the heat. I split the mixture between two pots if I double the amount, so the meatballs have room in the broth. If you end up with only a few, a handful of homemade noodles can round out the soup. Like dumpling soup, it’s eaten hot, but here the rice is inside the meatballs and the broth is sour. Let it cool and keep it in a sealed container in the fridge for up to 3 days. Hot chili pepper goes well at the table, and you can serve the sour cream separately so everyone can season their own bowl.

Frequently asked questions

Why might the meatballs fall apart?

A mixture with too much pork may not hold together as well. Keep the proportion of beef higher than the proportion of pork.

What kind of rice works in the meatballs?

Short- or medium-grain rice binds the mixture well. Long-grain rice stays more separate after cooking.

Can I replace fresh tomatoes with canned tomatoes?

Yes. Use 200 g drained canned diced tomatoes and cook them with the green onion until softened.

Do I need to boil a meaty bone too?

Not when you’re adding lots of meatballs. If you have fewer, you can boil a meaty bone at the start for flavor.
