Melitzanosalata, Greek-style eggplant salad

Melitzanosalata, the Greek-style eggplant salad, gets a soft interior and a smoky note from roasting the eggplants until tender. Red pepper, garlic, feta and walnuts are then mixed with lemon and vinegar; I like it tangier than the original, with a slightly coarse texture and toasted bread on the side. Prep: 20 minutes. Cook: 45 minutes. Rest: 50 minutes. Total: 115 minutes. Serves: 4. About 350 kcal and 6 g protein per serving.
Ingredients
- 2 large eggplants (1.2 kg)
- 1 large red pepper (180 g)
- 1 small onion (100 g)
- 4 garlic cloves
- 15 g fresh parsley
- 2 teaspoons malt vinegar
- 1/2 lemon
- 1/2 teaspoon dried oregano
- 2 tablespoons ground walnuts
- 2 tablespoons feta cheese
- 1 teaspoon salt
- 1/4 teaspoon chilli flakes
- 100 ml oil
Preparation
1. Preheat the oven to 220°C. Put the eggplants and pepper on a baking tray and roast for 45 minutes, turning them once halfway through. Take the pepper out after 30 minutes, when the skin is blackened and the flesh is soft. 2. Leave the vegetables to cool for 20 minutes, then peel them. Finely chop the eggplants and dice the pepper. 3. Finely chop the onion and parsley, crush the garlic and put them in a large bowl with the eggplants and pepper. Add 2 teaspoons malt vinegar, the juice of 1/2 lemon, oregano, ground walnuts, feta, 1 teaspoon salt and 1/4 teaspoon chilli flakes. Gradually mix in 100 ml oil until the salad comes together. 4. Cover the bowl and refrigerate the salad for 30 minutes.
Notes
Keep covered in the fridge for up to 3 days, or make it a day ahead. For a dairy-free version, leave out the feta; the usual version contains nuts and dairy. Serve it with cucumber, pepper and raw carrot. Choose firm eggplants that feel heavy for their size, with smooth skin. If the flesh seems watery after roasting, leave it to drain in a sieve before mixing.
Frequently asked questions
Can I roast the eggplants directly over a flame?
Yes, turn them every 5-7 minutes, until the skin blackens and the flesh gives. Roast the pepper over the flame in shorter bursts.
What should I do if the salad is too thick?
Mix in another 1 tablespoon oil, a little at a time, until the texture softens.
What can I use instead of malt vinegar?
Use 10 ml cider vinegar instead. Add the lemon at the start and adjust the taste after mixing.
