To prepare a delicious mushroom cream, start by boiling fresh mushrooms, finely chopped onion, peeled and diced carrot, peeled and cut potatoes, bay leaves, salt, and pepper to taste in 2 liters of water. Boil everything over medium heat, stirring occasionally, until the mushrooms become tender and fragrant, and the vegetables cook evenly. It is important to check the texture of the mushrooms, as they should be slightly soft but not overcooked. Once you have achieved the desired consistency, drain the water, being careful to keep a little of the liquid in which the mushrooms were boiled, as this will add extra flavor to the cream. Separate the mushrooms from the other vegetables and blend them using a blender until you obtain a fine paste. Add cooking cream, crushed garlic, dry white wine, and olive oil. If necessary, gradually incorporate a little of the reserved water, being careful not to thin the mushroom cream too much, as you want to maintain a creamy and rich texture. Season the cream with salt and pepper according to your preferences and set aside. To prepare the stuffed potatoes, peel the potatoes that have been boiled in salted water, then scoop out their insides, being careful to form a boat shape that is deep enough to hold the filling. In a pan, melt a little butter and add the chopped mushrooms, which you will sauté until golden and tender. Once the mushrooms have cooled, mix them with the cooked rice, finely chopped parsley, a teaspoon of butter, and a tablespoon of cream, homogenizing the mixture well. Season the mixture with salt and pepper to taste. Stuff each potato with this delicious mixture and place them in a heat-resistant dish. Pour the remaining melted butter over the potatoes to give them a special flavor while cooking. Season the cream with a little salt and pepper, then spread it evenly over the stuffed potatoes. Finally, generously sprinkle grated Parmesan or cheese on top to create a delicious crust during baking. Place the dish in a preheated oven at 180 degrees Celsius and let it bake for 15-20 minutes, or until the cheese melts and forms a beautifully golden, appetizing crust. Serve the potatoes warm, alongside the mushroom cream, to create a refined dish that will delight your guests' senses.
